Latin Chickpea Bowl

A Latin-inspired chickpea bowl brings the format of a grain bowl together with bright, punchy flavours: fluffy quinoa as the base, warm cumin- and paprika-spiced chickpeas for substance, and fresh toppings for colour and texture. Cherry tomatoes add juiciness, avocado brings creaminess, and a lime, extra virgin olive oil and coriander dressing keeps everything lively rather than heavy. It suits a quick lunch because the cooked elements are simple, the assembly is flexible, and the components can be kept separate until serving for the best texture.

Why this recipe works

  • Fast to assemble: Canned chickpeas and quick-cooking quinoa keep the bowl practical for lunch without relying on lengthy prep.
  • Good texture contrast: Fluffy quinoa, lightly crisped chickpeas, creamy avocado and juicy tomatoes give each bowl a varied, satisfying texture.
  • Bright finish: Lime juice cuts through the richness of the avocado and lifts the warm cumin and paprika.
  • Easy to prep ahead: The cooked quinoa and chickpeas can be stored separately, then combined with the avocado and dressing just before serving.

Texture tips

  • For better chickpea texture: Dry the chickpeas thoroughly before frying so they colour at the edges rather than steam in the pan.
  • Dress at the end: Add the lime dressing just before eating to keep the quinoa light and the vegetables fresh.

Make-ahead tips

  • Store in parts: Keep the quinoa, chickpeas and tomatoes together, but store the dressing and avocado separately for the best texture.
  • Reheat selectively: Warm only the quinoa and chickpeas until piping hot, then add the avocado, tomatoes, coriander and dressing after reheating.
  • Best once assembled: The finished bowl is best eaten soon after the avocado is cut and the dressing is added.

Ingredient notes

  • Choose a firm avocado: Use an avocado that is ripe but still firm enough to hold its shape when tossed through the bowl.
  • Use fresh herbs: Fresh coriander gives the bowl its clean, citrusy finish; flat-leaf parsley is a milder alternative.
  • Adjust the lime: Taste before serving and add a little extra lime if the bowl needs more brightness.

  1. Rinse the quinoa in a sieve, then tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then simmer gently for 12 minutes until the water is absorbed. Take off the heat and leave covered for 5 minutes, then fluff with a fork.
  2. Drain and rinse the canned chickpeas, then pat dry. Heat 1 tbsp of the extra virgin olive oil in a large frying pan over a medium-high heat, add the chickpeas, ground cumin, sweet paprika and 0.25 tsp of the fine sea salt. Cook for 6 to 8 minutes, stirring, until hot and lightly crisped at the edges.
  3. Finely chop the fresh coriander and halve the cherry tomatoes. Halve the avocado, remove the stone, then cut the flesh into chunks. Juice the lime into a mixing bowl, whisk in the remaining 2 tbsp extra virgin olive oil and the remaining fine sea salt to taste.
  4. Divide the quinoa between two bowls. Top with the spiced chickpeas, cherry tomatoes and avocado, then scatter over the fresh coriander. Spoon over the lime dressing and toss gently just before eating.

Tips

  • For the best texture, dry the chickpeas well before frying so they brown rather than steam.
  • If you are serving this later, keep the avocado whole and cut it just before eating to prevent browning.

Substitutions

  • Replace quinoa with brown rice for a heartier grain bowl.
  • Replace fresh coriander with fresh flat-leaf parsley if you prefer a milder herb.

Storage

  • Refrigerate up to 2 days
  • Store the quinoa, chickpeas and tomatoes in an airtight container in the fridge. Keep the avocado and dressing separate, then assemble and dress just before serving; if reheating, warm the quinoa and chickpeas in a microwave until piping hot.
