Latin-Style Salmon Bowl with Quinoa and Black Beans
Why this recipe works
- Bright citrus balance: Lime juice and zest lift the richness of the salmon and keep the beans and quinoa tasting fresh.
- Efficient cooking: The quinoa simmers while the salmon roasts, so the bowl comes together with little inactive time.
- Easy to serve warm or later: The grains, beans and sweetcorn hold well, making the bowl practical for lunch prep when the dressing is added at the end.

Ingredient notes
- Rinse the quinoa: A thorough rinse helps remove quinoa’s natural bitterness and gives a cleaner, lighter flavour.
- Choose even salmon fillets: Fillets of similar thickness roast more evenly, making it easier to keep the fish moist and flaky.
- Balance the dressing: Taste the lime dressing after tossing with the beans and sweetcorn, then adjust the seasoning if it needs more brightness or savouriness.
Texture tips
- Keep the salmon tender: Roast just until the fish flakes easily; leaving it too long can make the salmon dry.
- Let the quinoa stand: Resting the cooked quinoa off the heat before fluffing allows the grains to finish steaming and separate properly.
Make-ahead tips
- Keep the dressing separate: Store the lime dressing apart from the bowl components and spoon it over just before serving to preserve the fresh, sharp finish.
- Prepare the base ahead: The quinoa, black beans and sweetcorn can be cooked and chilled in advance, then assembled with the salmon when needed.
- Reheat gently: Warm the quinoa, beans and sweetcorn until piping hot, then add the salmon gently so it does not overcook.
Ingredient swaps
- Use brown rice: Brown rice can replace quinoa for a heartier bowl; cook it separately until tender before assembling.
- Swap the herb: Flat-leaf parsley gives a milder finish if coriander is not preferred.
- Change the spice profile: Smoked paprika can replace cumin for a deeper, smokier flavour.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Rinse the quinoa in a sieve, then tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt.
- Bring the quinoa to the boil, then cover and simmer on low for 12–15 minutes until the water is absorbed and the grains are tender. Take off the heat and leave, covered, for 5 minutes, then fluff with a fork.
- Meanwhile, put the salmon on a baking tray. Drizzle with 1 tbsp of the extra virgin olive oil, sprinkle over the ground cumin and 0.25 tsp of the fine sea salt, then rub to coat.
- Roast the salmon for 10–12 minutes, until just cooked through and flaking easily. If your fillets are thicker, give them a couple of minutes more.
- While the salmon roasts, finely grate or crush the garlic into a mixing bowl. Finely zest the lime into the bowl, then squeeze in the juice; whisk in the remaining 2 tbsp extra virgin olive oil and the remaining fine sea salt.
- Rinse and drain the canned black beans, then add to the bowl along with the sweet corn kernels. Toss with a spoonful of the dressing, just to lightly coat.
- Divide the quinoa between two bowls and spoon over the black bean and sweetcorn mixture. Top with the roasted salmon, spoon over the remaining dressing, and finish with the fresh coriander.

- If you are pregnant, elderly, or immunocompromised, make sure the salmon is cooked until piping hot throughout.
Substitutions
- Replace Quinoa with brown rice for a heartier bowl; cook the rice separately until tender, then assemble as written.
- Replace Fresh coriander with fresh flat-leaf parsley for a milder, more herby finish.
- Replace Ground cumin with smoked paprika for a smokier flavour profile.
Storage
- Refrigerate up to 2 days
- Cool and refrigerate in airtight containers, keeping the dressing separate if possible. Reheat the quinoa, beans and sweetcorn in the microwave until piping hot, then add the salmon and warm gently; spoon over the dressing and coriander just before serving.
