Latin Citrus Chicken Bowl

A citrus chicken bowl brings together the structure of a grain bowl with bright Latin-inspired flavours: fluffy rice, juicy marinated chicken, warm beans and sweetcorn, and a fresh tomato salsa to finish. Orange and lime give the chicken a lively acidity, while cumin adds earthiness and depth without making the dish heavy. The combination of hot rice and beans with cool salsa keeps each bowl varied in texture and temperature, and the coriander, onion and pan juices tie everything together. It is substantial enough for lunch or dinner, with components that can be prepared separately for easier serving or storage.

Why this recipe works

  • Bright citrus balance: Orange and lime bring freshness and acidity, helping balance the savoury chicken, beans and rice.
  • Simple layered flavour: Cumin, coriander, onion and pan juices build a rounded savoury base without needing a long cooking time.
  • Built for bowl-style serving: Rice, beans, corn, salsa and chicken can be layered to give each bowl a mix of warmth, freshness and texture.

Timing notes

  • Use the prep time well: Let the chicken sit in the citrus marinade while the rice cooks and rests; this gives the flavour time to settle without extending the recipe.
  • Rest the rice covered: Keeping the rice covered off the heat helps the grains finish steaming and gives a fluffier result.

Texture tips

  • Keep the chicken juicy: Chicken thighs are forgiving, but they still cook best over medium-high heat so they brown quickly without drying out.
  • Keep the salsa fresh: Spoon the tomato salsa over just before serving so the rice stays fluffy and the vegetables keep their bite.

Make-ahead tips

  • Store components separately: Keep the rice, chicken, beans and sweetcorn apart from the salsa for the best texture when reheating.
  • Reheat gently: Warm the rice and chicken with a small splash of water, or reheat in a 180°C (355°F) oven until piping hot.
  • Good for meal prep: The cooked chicken, rice, beans and sweetcorn hold well in the fridge, while the salsa is best kept fresh and added after reheating.

Ingredient swaps

  • Use chicken breast if preferred: Chicken breast cutlets can replace thighs, but they need slightly gentler cooking to avoid becoming dry.
  • Swap the herbs: Flat-leaf parsley gives a milder, greener finish if coriander is not to your taste.

  1. Zest and juice the orange and lime into a mixing bowl. Whisk in the olive oil, ground cumin, fine sea salt and black pepper. Add the chicken thighs and turn to coat, then leave to marinate while you prep the rest.
  2. Rinse the basmati rice until the water runs mostly clear, then tip into a saucepan with 300 ml water and a pinch of fine sea salt. Bring to the boil, cover, and cook on the lowest heat for 10 minutes. Remove from the heat and leave covered for 10 minutes, then fluff with a fork.
  3. Finely dice the yellow onion and tomatoes, then roughly chop the fresh coriander. In a bowl, mix the tomatoes with half the onion, half the coriander, a squeeze of lime, and a pinch of fine sea salt. Set aside as a quick salsa.
  4. Drain and rinse the canned black beans in a colander. Warm a large frying pan over medium heat with 1 tsp extra virgin olive oil taken from the measured amount if needed, then add the beans and sweet corn kernels. Cook for 3 to 4 minutes, stirring, until hot through; season with a pinch of fine sea salt and black pepper.
  5. Wipe out the pan, then return it to medium-high heat. Lift the chicken from the marinade, letting excess drip back into the bowl, and cook for 5 to 7 minutes, turning, until browned and cooked through. Pour in the remaining marinade and bubble for 30 to 60 seconds to glaze the chicken.
  6. Divide the rice between two bowls. Top with the black beans and sweet corn, then add the citrus chicken and spoon over any pan juices. Finish with the salsa and the remaining coriander and onion.

Recipe notes

Tips

  • For the best flavour, marinate the chicken for the full time while the rice cooks, and keep the heat fairly high when you add it to the pan so it browns rather than stews.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot all the way through with no pink remaining.

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets; reduce the cooking time slightly and take care not to overcook.
  • Replace Fresh coriander with fresh flat-leaf parsley for a milder, more herby finish.
  • Replace Ground cumin with taco seasoning for a more rounded spice profile.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate the rice, chicken, beans and sweetcorn in airtight containers; keep the salsa separate for best texture. Reheat the rice and chicken in a saucepan with a splash of water over low heat, or in a 180°C (355°F) oven until piping hot. Freeze the cooked chicken, rice, beans and sweetcorn for up to 2 months; defrost overnight in the fridge before reheating.
