Moroccan Spiced Sweet Potato Bowl

Moroccan-style grain bowls are an easy way to turn warm spices, pulses and a simple starch into a satisfying lunch. Here, roasted sweet potato gives the bowl soft, caramelised edges and earthy sweetness, while couscous keeps it light and quick to assemble. Chickpeas add substance, with cumin and sweet paprika bringing gentle depth rather than heat. Lemon juice and fresh coriander lift the couscous, and a spoonable Greek yoghurt topping adds cool creaminess. It is practical for meal prep too, especially if the yoghurt is stored separately and added just before serving.

Why this recipe works

  • Warm spice, bright finish: Cumin and sweet paprika season the sweet potato as it roasts, while lemon and coriander keep the couscous fresh rather than heavy.
  • Balanced textures: Tender roasted sweet potato, fluffy couscous, soft chickpeas and smooth yoghurt give the bowl enough contrast to feel complete.
  • Good for lunches: The couscous, chickpeas and roasted sweet potato store well, with the yoghurt topping best added just before serving.

Texture tips

  • Roast for browned edges: Let the sweet potato develop colour at the edges before removing it from the oven; this gives deeper flavour than simply cooking it until soft.
  • Keep the couscous light: Cover the couscous while it absorbs the hot water, then fluff it well with a fork so the grains stay separate.
  • Smooth the yoghurt topping: Whisk the yoghurt with lemon juice until spoonable, so it can be drizzled or dolloped without feeling heavy.

Ingredient swaps

  • Use quinoa instead of couscous: Cooked quinoa makes the bowl gluten-free while keeping the same hearty grain-bowl feel.
  • Make it dairy-free: Swap the Greek yoghurt for an unsweetened plant-based yoghurt with a little lemon juice for the same cooling contrast.
  • Richer topping option: Crème fraîche can replace Greek yoghurt for a fuller, slightly tangier finish.

Make-ahead tips

  • Keep the topping separate: Store the couscous mixture and roasted sweet potato together, but keep the yoghurt and fresh coriander separate until serving.
  • Prepare for several lunches: The cooked base keeps well in the fridge for up to 3 days, making it suitable for packed lunches or quick weekday meals.
  • Reheat before finishing: Warm the couscous mixture until piping hot, then add the yoghurt and coriander after reheating to keep the finish fresh.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm chunks.
  2. Tip the sweet potato onto a baking tray and toss with the olive oil, ground cumin, sweet paprika, fine sea salt and black pepper. Roast for 25 to 30 minutes, turning once, until tender and browned at the edges.
  3. Meanwhile, put the couscous in a mixing bowl. Bring the water to the boil, pour it over the couscous, cover the bowl and leave for 5 minutes, then fluff with a fork.
  4. Drain and rinse the chickpeas, then warm them in a saucepan over a low heat for 2 to 3 minutes. Finely chop the fresh coriander and squeeze the lemon.
  5. Stir the chickpeas, most of the coriander and half the lemon juice through the couscous. Taste and add a pinch more fine sea salt and black pepper if needed.
  6. In a small bowl, whisk the greek yogurt with the remaining lemon juice until smooth and spoonable. Divide the couscous mixture between bowls, top with the roasted sweet potato, and finish with the yoghurt and the remaining coriander.

Recipe notes

Tips

  • For deeper flavour, let the sweet potato roast until the edges are well browned, not just tender.
  • If serving to anyone vulnerable to foodborne illness, use pasteurised greek yogurt and keep the finished bowl chilled until serving.

Substitutions

  • Replace greek yogurt with crème fraîche for a richer, slightly tangier topping.
  • Replace couscous with quinoa for a gluten-free bowl.

Storage

  • Refrigerate up to 3 days
  • Store the couscous and sweet potato together in an airtight container, and keep the greek yogurt separate. Reheat the couscous mixture in the microwave until piping hot, then add the yoghurt and coriander just before serving.
