Canh Chua (Vietnamese Sweet and Sour Fish Soup)
Why this recipe works
- Bright, balanced broth: Tamarind brings the sour backbone, while pineapple, tomato and sugar soften the edges with gentle sweetness.
- Savoury depth: Fish sauce seasons the broth with umami, giving the soup depth without needing a long simmer.
- Fresh finish: Tender fish, juicy fruit, crisp bean sprouts and fresh herbs create a light but satisfying contrast.

Ingredient notes
- Tamarind paste: Tamarind gives canh chua its distinctive sourness. Stir it in fully before adjusting seasoning so the broth tastes balanced rather than sharply acidic.
- Choosing the fish: Use a mild white fish that holds together in broth. Firmer fillets are easier to handle and less likely to break apart.
- Pineapple matters: Ripe pineapple adds sweetness and fruitiness to the broth; underripe pineapple will make the soup taste sharper.
Texture tips
- Keep the fish tender: Once the fish is added, keep the soup at a gentle simmer and cook only until the pieces are opaque and flaking.
- Add sprouts at the end: Bean sprouts need only a brief cook so they stay crisp and fresh against the hot broth.
Adjust the heat
- For less heat: Use less chilli or remove the seeds before slicing.
- For more heat: Add extra sliced chilli near the end so the heat stays bright and fresh.
Make-ahead tips
- Store rice separately: Keep the jasmine rice separate from the soup so it does not absorb the broth and become soft.
- Reheat gently: Warm the soup over low heat until piping hot, avoiding a hard boil so the fish stays in pieces.

Instructions
- Rinse the jasmine rice in a colander until the water runs mostly clear. Tip into a saucepan with the measured water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, cut the pineapple into bite-size chunks and cut the tomatoes into wedges. Thinly slice the red chilli, slice the spring onions, and roughly chop the coriander. Cut the fish into large bite-size pieces.
- Bring the measured water for the soup to a lively simmer in a stockpot. Whisk in the tamarind paste until dissolved, then stir in the fish sauce, salt and sugar. Taste the broth and adjust with a little more fish sauce for saltiness or sugar for balance if needed.
- Add the pineapple and simmer for 4 minutes, then add the tomatoes and sliced chilli and simmer for 3 minutes. Slide in the fish and cook gently for 3 to 5 minutes, just until opaque and flaking. Keep the heat moderate so the fish stays in pieces.
- Add the bean sprouts and cook for 1 minute so they stay crisp. Turn off the heat, then stir through most of the spring onion and coriander, reserving a little for the top. Ladle into bowls and serve with the steamed jasmine rice alongside.
Recipe notes
Tips
- For a clearer broth, keep the soup at a gentle simmer once the fish goes in, and avoid stirring too much.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until fully opaque and piping hot throughout.
Substitutions
- Replace White fish fillet with Cod fillet for a firmer, flakier result.
- Replace Pineapple with Mango for a softer, sweeter fruit note.
- Replace Fresh coriander with Fresh mint for a different herbal finish.
Storage
- Refrigerate up to 2 days
- Cool the soup quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, taking care not to boil hard or the fish may break up; store rice separately and reheat with a splash of water.
