Mantı Platter (Lamb Dumplings with Garlic Yoghurt and Aleppo Butter)
Why this recipe works
- Classic dumpling method: A firm, rested dough rolls thinly and holds the small lamb filling securely during boiling.
- Layered savoury finish: Garlic yoghurt, Aleppo butter and dried mint add cool, warm and aromatic layers without overwhelming the dumplings.
- Balanced richness: Tangy yoghurt cuts through the lamb and butter, keeping the platter bright rather than heavy.

Timing notes
- Let the dough relax: Resting the dough makes it easier to roll very thinly and helps prevent it springing back.
- Most of the work is shaping: The boiling is quick, but rolling, cutting and filling the dumplings takes time, so allow a calm prep window.
- Assemble just before serving: Drain the dumplings well and add the yoghurt and butter sauce at the end so the texture stays distinct.
Authenticity notes
- Small dumplings matter: Mantı are recognisable for their small size, which gives a good balance of pasta, filling and sauce in each bite.
- Yoghurt and spiced butter: Garlic yoghurt with pepper-infused butter is a classic way to serve mantı, adding richness, tang and gentle heat.
- Platter-style serving: Serving the dumplings on a shared platter keeps the dish generous and lets the sauces coat the top evenly.
Texture tips
- Roll the dough thinly: Thin dough gives tender dumplings and prevents the pasta from feeling heavy around the filling.
- Drain thoroughly: Let excess cooking water drain away before plating so the yoghurt stays creamy rather than diluted.
- Seal firmly: Press the corners together well so the dumplings keep their shape and the filling stays enclosed.
Make-ahead tips
- Freeze uncooked dumplings: Freeze shaped mantı in a single layer before bagging, then boil from frozen with a little extra cooking time.
- Keep sauces separate: Store cooked dumplings, yoghurt and butter sauce separately to preserve the best texture.
- Reheat gently: Warm the dumplings in gently simmering water until piping hot, then add the yoghurt and reheated butter sauce.

Instructions
- Tip the flour into a bowl and stir in the salt. Make a well, add the egg and most of the water, then mix to a shaggy dough, adding the remaining water only if needed. Knead on a lightly floured surface for 8 to 10 minutes until smooth and firm.
- Cover the dough and let it rest at room temperature so it relaxes and rolls more easily. While it rests, finely grate the onion into a bowl, then mix in the minced lamb, black pepper and salt until tacky and well combined.
- Divide the dough into 2 pieces and keep one covered while you work. Roll the first piece very thin, aiming for about 1 mm, dusting with a little flour as needed. Cut into small squares, about 2.5 cm, ready for filling.
- Place a tiny dab of filling in the centre of each square, then pinch the corners together to form little parcels, pressing firmly to seal. Repeat with the remaining dough and filling, keeping finished dumplings lightly floured so they do not stick. If the dough starts to spring back, pause for a few minutes to let it relax.
- Stir the yogurt with the garlic and salt until smooth, then set aside at room temperature so it is not fridge-cold on the dumplings. Bring a large pot of well-salted water to the boil. Add the dumplings in batches and boil for 6 to 8 minutes until the pasta is tender and the filling is cooked through.
- Meanwhile, melt the butter in a small saucepan over low heat until foaming, then stir in the Aleppo pepper and warm for 30 to 60 seconds until fragrant. Drain the dumplings well. Arrange them on a platter, spoon over the garlic yoghurt, drizzle with the Aleppo butter, and finish with dried mint.
Recipe notes
Tips
- Keep the filling portions very small; overfilling makes the dumplings hard to seal and they can burst in the water.
- Boil the dumplings in batches so the water stays at a steady boil and they do not stick together.
- If serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt and make sure the lamb filling is fully cooked.
Substitutions
- Replace Minced lamb with minced beef for a milder, more familiar flavour.
- Replace Greek yogurt with whole-milk yogurt for a looser, lighter topping.
- Replace Aleppo pepper with smoked paprika for a gentler heat and a smokier butter sauce.
Storage
- Refrigerate up to 2 days
- Store cooked dumplings and sauces separately in airtight containers. Reheat dumplings in gently simmering water for 2 to 3 minutes until piping hot, then top with the yoghurt and warmed butter sauce. Freeze uncooked dumplings in a single layer, then bag; boil from frozen, adding 2 to 3 minutes to the cooking time.
