Turkish Spiced Salmon Bowl with Bulgur and Lemon

Fragrant spices, nutty bulgur and a crisp cucumber-tomato salad give this Turkish-style salmon bowl its clean, satisfying character. The dish follows the easy logic of a grain bowl: a warm base, a protein cooked quickly, and fresh vegetables dressed simply with lemon and olive oil. Sweet paprika and cumin bring warmth to the salmon without overpowering it, while pan-searing keeps the skin crisp and the flesh just cooked. It is well suited to a quick lunch or light dinner, with enough freshness from the salad and lemon wedges to keep the bowl bright rather than heavy.

Why this recipe works

  • Fast, balanced cooking: The bulgur cooks while the salmon is seasoned and seared, keeping the whole bowl practical for a weekday meal.
  • Good texture contrast: Crisp salmon skin, fluffy bulgur and juicy cucumber and tomato make each bowl feel fresh rather than heavy.
  • Bright finish: Lemon juice and extra-virgin olive oil lift the warm paprika and cumin, giving the dish a clean, savoury balance.

Texture tips

  • For crisp salmon skin: Pat the salmon dry before seasoning and let it cook skin-side down without moving it at the start, so the skin can crisp and release cleanly.
  • Keep the salmon tender: Take the fish off the heat when it is just opaque at the thickest part, then let it rest briefly before serving.

Ingredient swaps

  • Use quinoa for gluten-free bowls: Swap the bulgur for quinoa and cook it according to the packet instructions before assembling the bowls.
  • Try smoked paprika: Smoked paprika can replace sweet paprika if you want a deeper, slightly smokier flavour.

Make-ahead tips

  • Store for better texture: Keep the salmon, bulgur and cucumber-tomato salad in separate airtight containers so the grains do not absorb too much dressing.
  • Reheat gently: Warm the salmon and bulgur over a low heat with a small splash of water until piping hot, then add the salad and lemon at the end.

  1. Put the bulgur in a saucepan with the water and 1/2 tsp of the fine sea salt. Bring to the boil, then cover and cook on a low heat for 10 to 12 minutes until tender and the water is absorbed. Take off the heat and keep covered for 5 minutes, then fluff with a fork.
  2. Meanwhile, pat the salmon dry and season all over with the sweet paprika, ground cumin, 1/4 tsp of the fine sea salt and the black pepper (if using). Drizzle over 1 tbsp of the extra virgin olive oil and rub to coat evenly.
  3. Heat a frying pan over a medium-high heat. Add the salmon skin-side down and cook for 3 to 4 minutes until the skin is crisp, then turn and cook for 2 to 4 minutes more until just cooked through and opaque at the thickest part. Transfer to a plate to rest while you assemble the bowls.
  4. Cut the cucumber and tomato into bite-size pieces and put them in a mixing bowl. Squeeze in the juice from half the lemon, add 1 tbsp of the extra virgin olive oil and a pinch of the remaining fine sea salt, then toss well. Cut the remaining lemon half into wedges for serving.
  5. Divide the bulgur between two bowls and top with the cucumber and tomato mixture. Sit the salmon on top and spoon over any resting juices. Finish with the remaining 1 tbsp extra virgin olive oil and serve with the lemon wedges for squeezing over.
