Lentil Soup (Shorbat Adas)
Why this recipe works
- Naturally creamy: Red lentils soften quickly and break down as they simmer, giving the soup body without cream or dairy.
- Spices built into the base: Blooming cumin and turmeric in the oil before adding the lentils gives the soup a warmer, fuller flavour.
- Bright finish: Lemon juice added at the end cuts through the earthy lentils and keeps the soup tasting fresh.

Ingredient notes
- Use red lentils: Red lentils are the right choice here because they cook quickly and blend into a smooth, velvety soup.
- Bloom the spices: Stirring the cumin and turmeric briefly in the oil helps release their aroma before the stock goes in.
- Add lemon to taste: Start with a little lemon juice, then adjust until the soup tastes bright but not sharp.
Texture tips
- For a silkier finish: Blend thoroughly once the lentils are very soft; undercooked lentils will leave the soup slightly grainy.
- Loosen if needed: If the soup thickens after blending or reheating, add hot water gradually until it is spoonable.
Make-ahead tips
- Good for batch cooking: The soup keeps well in the fridge and is easy to portion for quick lunches or light dinners.
- Freezes well: Cool completely, freeze in portions, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm over low heat, stirring often and adding a splash of water if it has thickened.
Authenticity notes
- Home-style soup: Shorbat Adas is commonly made as a simple, nourishing lentil soup with a smooth texture and a lemony finish.
- Regional variation: Seasonings vary by kitchen; cumin is a frequent anchor, while other warm spices may be adjusted to taste.

Ingredients
Instructions
- Warm the extra virgin olive oil in a saucepan over medium heat. Finely chop the yellow onion, then peel and dice the carrot; add both to the pan with a pinch of the fine sea salt. Cook for 8 to 10 minutes, stirring, until softened but not browned.
- Crush the garlic and stir it in for 30 seconds until fragrant. Add the ground cumin and ground turmeric and cook for 30 seconds more, stirring so the spices bloom in the oil. Tip in the red lentils and stir to coat.
- Pour in the vegetable stock and bring to a gentle simmer. Cook for 18 to 22 minutes, stirring occasionally, until the lentils are very soft and the carrots are tender. Skim any foam from the surface if needed.
- Take the pan off the heat and blend until smooth with an immersion blender. If the soup seems too thick, blend in a splash of hot water from the kettle a little at a time until it is silky and spoonable. Return to a low heat just to warm through.
- Season with the remaining fine sea salt and the black pepper. Squeeze in the lemon juice to taste, starting with half the lemon, and adjust until bright and balanced. Serve hot with extra lemon at the table if you like.
Recipe notes
Tips
- Rinse the red lentils in a sieve-strainer until the water runs mostly clear to keep the soup tasting clean and to reduce foaming.
- Keep the heat at a gentle simmer so the lentils break down evenly without catching on the base of the pan.
- Add the lemon juice off the heat or over a very low heat to keep its flavour fresh and bright.
Substitutions
- Replace the vegetable stock with water for a lighter soup, then increase the fine sea salt and black pepper to taste.
- Replace the ground cumin with ground coriander for a softer, more citrusy spice profile.
- Replace the lemon with lime for a sharper, more aromatic finish.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, stirring often and adding a little water if it has thickened; bring to a simmer until piping hot. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
