Chicken Machboos (Gulf-Style Spiced Rice with Baharat and Dried Lime)
Why this recipe works
- Layered aromatics: Onion, garlic, baharat, tomato and dried black lime build a savoury base before the rice is added.
- One-pot depth: The chicken seasons the cooking liquid, then the basmati absorbs that broth as it steams.
- Rice cooked in the broth: Simmering the chicken first gives the rice a fuller flavour than cooking the components separately.

Ingredient notes
- Dried black lime: Piercing the loomi before it goes into the pot helps release its sharp, citrusy aroma into the rice.
- Rinse the basmati well: Removing excess surface starch helps the grains cook up lighter and more separate.
- Baharat varies by blend: Some blends are warmer, sweeter or pepperier than others, so taste and adjust the final seasoning if needed.
Timing notes
- Rest before fluffing: Keeping the pot covered off the heat allows the rice to finish steaming and settle before serving.
- Mostly hands-off cooking: The active work is mainly slicing, blooming the spices and browning the chicken; the simmering and rice cooking need gentle heat rather than constant attention.
Common mistakes
- Boiling too hard after adding rice: Keep the heat low once the rice goes in; a vigorous boil can make the base catch before the grains are tender.
- Stirring the rice too much: After the rice is evenly distributed, leave it to cook undisturbed so the grains stay intact.
- Check the chicken properly: Drumsticks should be piping hot throughout with no pink at the bone before serving.
Make-ahead tips
- Good for leftovers: Cool quickly, then refrigerate in an airtight container for up to 3 days.
- Freezer suitable: Freeze cooked portions once cooled, then thaw safely before reheating until piping hot.
- Reheat gently: Add a splash of water and reheat covered over low heat, or warm in a 180°C (355°F) oven until piping hot.

Ingredients
Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear, then drain well. Set aside while you start the base.
- Heat the ghee in a large, heavy pot over medium heat. Finely slice the onion, add it to the pot with a pinch of the salt, and cook for 10 to 12 minutes until soft and lightly golden.
- Crush the garlic and stir it in for 1 minute until fragrant. Add the baharat and cook for 30 seconds, stirring so the spices bloom in the fat.
- Add the chicken drumsticks and turn to coat in the spiced onion mixture. Season with the remaining salt and the black pepper, then cook for 5 to 6 minutes, turning occasionally, until the chicken is lightly coloured.
- Pour in the tomato passata and chicken stock, then add the dried black lime. Bring to a gentle simmer, cover, and cook for 25 minutes, turning the drumsticks once, until the chicken is nearly cooked through.
- Stir in the drained rice, making sure it is evenly distributed and mostly submerged. Return to a gentle simmer, cover, and cook on low for 18 to 20 minutes until the rice is tender and the liquid is absorbed.
- Take the pot off the heat and rest, covered, for 10 minutes to finish steaming. Roughly chop the fresh coriander, fluff the rice, and stir most of the coriander through; scatter the rest on top to serve.
Recipe notes
Tips
- Pierce the dried black lime a few times with the tip of a knife before adding it, so it perfumes the rice more evenly.
- Keep the heat low once the rice goes in; if it boils hard, the rice can catch on the bottom before it cooks through.
- If serving vulnerable groups, make sure the chicken is cooked until piping hot throughout with no pink at the bone.
Substitutions
- Replace Ghee with Unsalted butter for a similar richness, keeping the heat moderate so it does not brown too quickly.
- Replace Chicken drumsticks with Chicken thighs for a slightly richer result; keep the simmer gentle so the meat stays tender.
- Replace Tomato passata with Canned-crushed-tomatoes for a chunkier sauce; simmer 5 minutes longer before adding the rice.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container. Reheat with a splash of water in a covered saucepan over low heat, or in a 180°C (355°F) oven until piping hot; loosen the rice with a fork before serving.
