Kabsa (One-Pot Chicken and Rice)

Fragrant and generous, kabsa is a Middle Eastern chicken-and-rice dish closely associated with the Arabian Peninsula, where spiced rice is often served as the centrepiece of a shared meal. Long-grain basmati cooks in a savoury tomato broth with browned chicken, taking on the warmth of cumin, cardamom, cinnamon and bay as the meat turns tender. Raisins add pockets of gentle sweetness, while roasted almonds bring a crisp finish. It is practical one-pot cooking with a celebratory feel: hearty enough for dinner, easy to serve from the pot, and well suited to simple accompaniments such as yoghurt, salad or pickles.

Why this recipe works

  • Layered spice base: Browning the chicken, softening the onion and briefly blooming the spices build depth before the rice is added.
  • Rice and chicken cook together: The basmati absorbs the seasoned tomato broth and chicken juices, creating a cohesive one-pot dish with minimal washing up.
  • Balanced texture: Tender chicken and fluffy rice are finished with roasted almonds for crunch and raisins for small pockets of sweetness.

Timing notes

  • Rest the rice before serving: Leaving the covered pot off the heat for 10 minutes lets the rice finish steaming and makes it easier to fluff without breaking.
  • Use the active time well: Rinse and drain the rice before cooking starts so it is ready to add once the chicken has simmered.

Ingredient notes

  • Choose basmati rice: Long-grain basmati is important here because it stays separate and aromatic when cooked in the spiced broth.
  • Ghee adds richness: Ghee gives the onions and spices a rounded, buttery flavour; unsalted butter is the closest substitute.
  • Finish with nuts last: Scatter the roasted almonds over the finished rice so they keep their crunch rather than softening in the pot.

Common mistakes

  • Avoid a hard boil: Once the stock is added, keep the simmer gentle; aggressive boiling can toughen the chicken and cook the rice unevenly.
  • Manage excess liquid: If the rice is tender but still wet, uncover briefly over low heat before resting the pot covered.
  • Check the chicken properly: Bone-in thighs should be piping hot throughout with no pink at the bone before serving.

Make-ahead tips

  • Good for leftovers: Cool leftovers quickly and refrigerate in an airtight container for up to 3 days.
  • Freezer-friendly: Freeze cooled portions, then thaw overnight in the fridge before reheating.
  • Reheat gently: Warm in a covered saucepan with a splash of water over low heat, or in a 180°C (355°F) oven until piping hot throughout.

  1. Rinse the basmati rice in cold water until the water runs mostly clear, then drain well. Season the chicken thighs all over with 1 tsp of the fine sea salt.
  2. Heat the ghee in a large, heavy pot over medium-high heat. Brown the chicken thighs, skin-side down first, for 4 to 5 minutes per side until deeply golden, then transfer to a plate.
  3. Lower the heat to medium and add the yellow onion to the pot. Cook for 6 to 8 minutes until softened and lightly golden, scraping up any browned bits.
  4. Add the garlic, ground cumin and ground cardamom and cook for 1 minute until fragrant. Stir in the cinnamon sticks and bay leaves.
  5. Tip in the canned chopped tomatoes and cook for 4 to 5 minutes, stirring, until slightly thickened and less raw-smelling. Pour in the chicken stock and bring to a gentle simmer.
  6. Return the chicken to the pot, along with any juices on the plate, and simmer gently for 20 minutes. The broth should be fragrant and the chicken should be starting to turn tender.
  7. Stir in the drained rice, the remaining 1 tsp fine sea salt and the raisin. Bring back to a simmer, then cover and cook on low for 18 minutes until the rice is tender and the liquid is absorbed.
  8. Turn off the heat and leave the pot covered for 10 minutes to steam and finish the rice. Scatter over the roasted almonds, then fluff the rice gently around the chicken and serve.

Recipe notes

Tips

  • Keep the simmer gentle once the chicken stock goes in; a hard boil can make the rice cook unevenly and the chicken dry out.
  • If the rice is tender but there is still a little liquid, leave the lid off for 2 to 3 minutes over low heat, then cover and rest for 10 minutes.
  • For vulnerable groups, make sure the chicken thighs are cooked until piping hot throughout with no pink at the bone.

Substitutions

  • Replace ghee with unsalted butter for a similar richness.
  • Replace roasted almonds with pistachios for a more traditional festive finish.
  • Replace raisin with dried apricot for a fruitier sweetness.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in an airtight container. Reheat in a covered saucepan with a splash of water over low heat, or in a 180°C (355°F) oven until piping hot throughout; thaw overnight in the fridge before reheating if frozen.
