Pasta alla Trapanese (Sicilian Tomato and Almond Pesto Pasta)
Why this recipe works
- Fast sauce preparation: The pesto is made while the pasta cooks, keeping the whole dish comfortably under 30 minutes.
- Fresh but savoury: Raw tomatoes and basil give brightness, while toasted almonds, garlic and pecorino add depth and savoury balance.
- Glossy coating: Reserved pasta water loosens the pesto and helps it cling to the spaghetti without needing to cook the sauce.

Authenticity notes
- Trapani-style pesto: This Sicilian pesto is typically tomato-based and almond-rich, giving it a fresher, lighter character than Ligurian basil pesto.
- Traditional pasta shape: Busiate is the classic pairing when available, as its twists catch the coarse pesto well; spaghetti is a practical everyday alternative.
Texture tips
- Keep some texture: Pulse the pesto just until spoonable rather than fully smooth, so the almonds and tomato retain a rustic bite.
- Toss off the heat: Combine the pesto and pasta away from direct heat to preserve the fresh tomato flavour and help the olive oil emulsify gently with the pasta water.
Ingredient notes
- Use ripe tomatoes: Because the sauce is raw, ripe, well-flavoured tomatoes make the biggest difference to the finished dish.
- Toast the almonds lightly: A brief toast brings out the almonds’ nuttiness without making the pesto taste roasted or bitter.
Make-ahead tips
- Prepare the pesto ahead: The pesto can be made earlier in the day and refrigerated, then loosened with hot pasta water just before serving.
- Reheat gently: Warm leftovers in a frying pan with a little water or olive oil, using gentle heat so the raw pesto keeps its fresh character.

Ingredients
Instructions
- Toast the almonds in a dry frying pan over medium heat for 4 to 6 minutes, shaking often, until lightly golden and fragrant. Tip onto a plate to cool slightly.
- Bring a large pot of water to the boil and salt it well. Cook the spaghetti until al dente, according to the packet timings.
- While the pasta cooks, roughly chop the tomatoes and add them to a food processor with the toasted almonds, basil, garlic and fine sea salt. Pulse to a coarse pesto, then drizzle in the olive oil and pulse again until spoonable but still textured.
- Finely grate the pecorino Romano cheese. Reserve a small handful for serving, then stir the rest into the pesto.
- Reserve 150 ml of the pasta cooking water, then drain the spaghetti. Return the pasta to the pot off the heat, add the pesto and splash in enough reserved pasta water to coat the strands in a glossy sauce.
- Season with black pepper and a pinch more fine sea salt if needed. Serve straight away, topped with the reserved pecorino.
Recipe notes
Tips
- Keep the pesto raw and fresh by tossing it with the pasta off the heat, then loosening with hot pasta water.
- For the best texture, pulse the pesto so it stays slightly coarse rather than completely smooth.
- If serving to anyone vulnerable, use pasteurised hard cheese and follow good hygiene when handling raw garlic and tomatoes.
Substitutions
- Replace Spaghetti with busiate if you have it for a more traditional shape.
- Replace Pecorino Romano cheese with Parmesan for a milder, less salty finish.
- Replace Almonds with roasted pine nuts for a softer, more buttery pesto.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly and refrigerate in a sealed container. Reheat gently in a frying pan with a splash of water or olive oil just until piping hot; avoid high heat to keep the pesto tasting fresh.
