Coq au Vin with Pearl Onions
Why this recipe works
- Deep savoury base: Bacon fat, browned chicken, mushrooms and tomato purée build a concentrated foundation before the wine and stock are added.
- Classic braising method: The chicken cooks gently in a wine-based sauce, which keeps the meat tender while the liquid reduces into a glossy coating.
- Built for hearty sides: The rich sauce is ideal with mashed potatoes or buttered noodles, making the dish feel complete without extra fuss.

Timing notes
- Most of the time is hands-off: The active work is mainly browning and building the sauce; the covered simmer does the heavy lifting.
- Rest before serving: A short rest off the heat helps the sauce settle and gives the chicken time to finish gently.
- Serve after the final reduction: The dish is ready when the sauce looks glossy and lightly thickened rather than thin or watery.
Make-ahead tips
- Excellent made ahead: The flavours continue to deepen in the fridge, making this a strong option for preparing a day in advance.
- Reheat gently: Warm over low heat until piping hot, adding a splash of chicken stock if the sauce has thickened too much.
- Freezes well: Cool completely before freezing, then defrost overnight in the fridge and reheat gently to protect the texture of the chicken.
Ingredient notes
- Use bone-in thighs: Bone-in, skin-on thighs suit braising because they stay juicy and bring more depth to the sauce than leaner cuts.
- Choose a drinkable red wine: The wine is central to the sauce, so avoid anything harsh or overly sweet; a dry red gives the best balance.
- Mushrooms need proper browning: Let their moisture cook off before adding the liquid so they taste savoury rather than spongy.
Common mistakes
- Boiling the braise: Keep the liquid at a gentle simmer once the chicken goes back in; vigorous boiling can tighten the meat.
- Crowding during browning: Brown the chicken in batches so the skin colours properly instead of steaming.
- Stopping before the sauce reduces: The uncovered simmer at the end is what turns the braising liquid into a lightly thickened, glossy sauce.

Ingredients
Instructions
- In a large casserole over medium heat, cook the bacon for 6 to 8 minutes until the fat renders and the bacon is lightly golden. Lift out the bacon, leaving the fat in the pan.
- Season the chicken lightly with salt and pepper, then brown in the bacon fat in batches, skin-side down first, until deeply golden. Transfer to a plate.
- Add the butter to the pan, then sauté the pearl onions for 5 minutes until they take on a little colour. Add the mushrooms and cook for 6 to 8 minutes until browned and their liquid has evaporated.
- Stir in the garlic and cook for 30 seconds until fragrant. Sprinkle over the flour and cook, stirring, for 1 minute so it loses its raw taste.
- Stir in the tomato purée, then pour in the red wine, scraping up any browned bits from the base. Simmer for 5 minutes to cook off some of the alcohol.
- Add the chicken stock, bay leaves, thyme and the reserved bacon, then return the chicken to the pan, nestling it into the liquid. Bring to a gentle simmer, cover, and cook for 45 minutes, adjusting the heat so it barely bubbles.
- Uncover and simmer for 10 to 15 minutes until the sauce is glossy and lightly thickened, and the chicken is tender. Taste and adjust seasoning, then rest off the heat for 5 minutes before serving.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer very gentle once the chicken goes back in; a hard boil can make the thighs tighten and dry out.
- If the sauce thickens too much while reducing, loosen it with a splash of chicken stock and simmer briefly to bring it back together.
- If serving vulnerable groups, make sure the chicken is piping hot throughout before serving.
Substitutions
- Replace Chicken thighs with chicken drumsticks for a similar braise time and rich flavour.
- Replace Red wine with dry white wine for a lighter, more delicate sauce.
- Replace Button mushrooms with cremini mushrooms for a deeper, earthier flavour.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container. Reheat gently on the hob over low heat until piping hot, adding a splash of chicken stock if needed; freeze for up to 2 months and defrost overnight in the fridge before reheating.
