Zuppa di Pesce alla Livornese (Tuscan Fish Soup)
Why this recipe works
- Layered broth: Garlic, chilli, tomatoes, white wine and fish stock build a savoury base before the seafood is added.
- Bright but savoury: Tomatoes and wine bring acidity that balances the richness of the seafood and olive oil.
- Built for bread: Crisp sourdough turns the tomato-seafood broth into a satisfying bowl without needing extra sides.

Timing notes
- Serve as soon as the seafood is cooked: The soup is at its best immediately after the seafood turns tender and opaque; holding it too long can make delicate pieces firm.
- Build the broth first: Give the tomato, wine and stock base time to simmer before adding the seafood, so the broth has depth without overcooking the fish.
Adjust the heat
- For less heat: Reduce the chilli flakes and let the garlic and tomatoes carry the flavour of the broth.
- For a warmer finish: Increase the chilli flakes slightly, keeping the heat in balance so it does not overpower the seafood.
Ingredient notes
- Choose a mixed seafood selection: A combination of firm fish, prawns, squid, mussels or clams gives the soup varied texture and a fuller seafood flavour.
- Use a good fish stock: The stock forms much of the broth, so a clean, savoury stock makes the finished soup taste more rounded.
- Balance the tomatoes: Very ripe tomatoes will taste sweeter and softer; sharper tomatoes may need more careful seasoning at the end.
Make-ahead tips
- Make the broth in advance: The tomato, wine and stock base can be prepared ahead, then reheated gently before adding the seafood just before serving.
- Reheat gently: Warm leftovers over low heat until piping hot, avoiding a hard boil to help keep the seafood tender.

Instructions
- Set a large pot over medium heat and warm the olive oil. Thinly slice the garlic and add it with the chilli flakes; cook for 1 minute until fragrant, without letting the garlic colour.
- Roughly chop the tomatoes and add them to the pot with the salt and black pepper. Cook for 8 to 10 minutes, stirring occasionally, until the tomatoes soften and release their juices.
- Pour in the white wine and simmer for 3 to 4 minutes to cook off the alcohol. Add the fish stock, bring to a gentle simmer, then cook for 15 minutes to develop a rich broth.
- Add the seafood mix and keep the soup at a gentle simmer. Cook for 4 to 6 minutes, stirring once or twice, until the seafood is just cooked through and tender.
- Meanwhile, toast the sourdough bread until crisp and golden. Finely chop the parsley and stir it into the soup off the heat; taste and adjust seasoning with a little more salt and pepper if needed.
- Ladle the soup into bowls and serve straight away with the toasted sourdough on the side. Drizzle a little extra olive oil over each portion if you like.
Recipe notes
Tips
- Keep the heat gentle once the seafood goes in; a hard boil can make it tough and can break up delicate pieces.
- If your seafood mix includes mussels or clams, discard any that do not open during cooking.
- For anyone who is pregnant, elderly, immunocompromised, or very young, make sure the seafood is thoroughly cooked and served piping hot.
Substitutions
- Replace Dry White Wine with an equal amount of Fish stock for an alcohol-free version.
- Replace Chili flakes with a smaller amount for a milder soup, or increase slightly for more heat.
- Replace Sourdough bread with thicker slices for sturdier toasts that hold up well alongside the soup.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, avoiding boiling to keep the seafood tender; toast fresh bread to serve.
