Agnello in Umido con Olive e Pomodori (Lamb Stew with Olives and Tomatoes)
Why this recipe works
- Layered savoury flavour: Onion, garlic, rosemary, wine and tomatoes build a deep base before the olives add a salty, briny finish.
- Tender, slow-simmered lamb: Lamb shoulder suits gentle cooking, becoming soft while enriching the sauce as it simmers.
- One-pot depth: Browning, reducing and simmering happen in the same Dutch oven, keeping the method simple while preserving flavour.

Authenticity notes
- Home-style Italian stew: In umido refers to cooking gently in a moist, saucy base; here, tomatoes, wine and aromatics create the braising liquid.
- Olive choice varies: Black olives give a deeper briny flavour, while green olives make the stew slightly sharper and lighter.
Ingredient notes
- Choose shoulder for tenderness: Lamb shoulder is well suited to slow simmering because it softens gradually and gives the sauce body.
- Use a dry red wine: A dry wine keeps the sauce savoury and balanced; avoid anything notably sweet.
- Season after adding olives: Olives contribute saltiness, so taste near the end before adding more salt.
Make-ahead tips
- Good the next day: The stew holds well after chilling, and the flavours become more integrated after resting overnight.
- Reheat gently: Warm over low heat until piping hot, adding a little water if the sauce has thickened too much.
- Freezer-friendly: Cool completely before freezing, then defrost in the fridge before reheating gently.
Common mistakes
- Boiling too hard: Keep the stew at a slow bubble; a rapid boil can toughen the lamb and reduce the sauce too quickly.
- Adding olives too early: Stir olives in near the end so their briny flavour stays clear rather than overpowering the whole sauce.

Ingredients
Instructions
- Warm 2 tbsp of the olive oil in a Dutch oven over medium-high heat. Add the onion with a pinch of salt and cook for 6 to 8 minutes, stirring, until softened and lightly golden. Stir in the garlic and rosemary and cook for 1 minute until fragrant.
- Add the lamb and turn the heat up slightly. Cook for 6 to 8 minutes, stirring and scraping the base of the pot, until the lamb loses its raw colour and any liquid has mostly evaporated. Pour in the red wine and simmer for 3 to 4 minutes to reduce slightly.
- Stir in the tomatoes and bay leaves, then bring to a gentle simmer. Cover and cook on low for 70 to 75 minutes, stirring occasionally, until the lamb is very tender and the sauce has thickened. If it looks dry at any point, lower the heat and keep it at a slow, steady bubble.
- Stir in the olives and simmer uncovered for 8 to 10 minutes to meld the flavours and finish thickening the sauce. Taste and adjust seasoning with salt if needed. Serve hot, drizzled with the remaining 1 tbsp olive oil.
Recipe notes
Tips
- Keep the stew at a gentle simmer rather than a rapid boil so the lamb turns tender without the sauce reducing too quickly.
- If you are serving vulnerable groups, use pasteurised wine-free alternatives and ensure the stew is piping hot throughout before serving.
Substitutions
- Replace Lamb shoulder with Lamb leg boneless for a leaner stew; start checking for tenderness 15 minutes earlier.
- Replace Black Kalamata pitted olives with Green pitted olives for a milder, less briny finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, adding a splash of water if needed, until piping hot. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
