Cauliflower Cheese with Crispy Breadcrumbs
Why this recipe works
- Creamy centre: A flour-and-butter roux thickens the milk before the cheese is added, giving the sauce enough body to coat the cauliflower.
- Crisp topping: Buttered breadcrumbs bake into a golden crust, adding texture against the soft florets and cheese sauce.
- Sharper flavour: English mustard cuts through the richness of the cheddar and milk without making the dish overtly spicy.

Texture tips
- Drain the cauliflower well: Let the florets steam-dry after boiling so excess water does not thin the cheese sauce during baking.
- Keep the crumbs loose: Scatter the breadcrumb mixture lightly over the top rather than pressing it down, which helps it crisp evenly.
- Rest before serving: A short stand after baking allows the sauce to settle and thicken slightly before spooning.
Ingredient notes
- Choose a full-flavoured cheddar: A mature cheddar gives the sauce a stronger savoury flavour, while a milder cheddar will make the bake softer and creamier in taste.
- Mustard options: English mustard gives a sharper finish; Dijon is a smoother alternative if you prefer gentler heat.
- Breadcrumb texture: Coarser breadcrumbs create a more rustic crunch, while finer crumbs give a neater, more even crust.
Make-ahead tips
- Assemble in advance: The cauliflower and sauce can be assembled ahead and chilled, then topped with breadcrumbs just before baking.
- Best for crispness: The bake is at its crispest on the day it is made, as the topping softens once refrigerated.
- Reheat gently: Reheat in a 180°C (355°F) oven until piping hot, covering loosely if the topping begins to darken too quickly.
Serving ideas
- Serve with salad: A crisp green salad balances the richness of the cheese sauce.
- Use as a side: Cauliflower cheese also works well alongside roast meats, baked potatoes or other simple vegetable dishes.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Cut the cauliflower into florets and bring a large pot of water to the boil; add 1 tsp of the salt.
- Boil the florets for 5 to 6 minutes until just tender but still holding their shape. Drain well and leave to steam-dry for a couple of minutes.
- Melt 40 g of the butter in a saucepan over medium heat, then stir in the flour and cook for 1 minute until it smells biscuity. Gradually whisk in the milk until smooth, then cook for 4 to 6 minutes, whisking, until thick enough to coat the back of a spoon.
- Take the pan off the heat and stir in 170 g of the cheddar until melted. Season with the remaining 1 tsp salt and the black pepper.
- Tip the cauliflower into a baking dish and pour over the cheese sauce, turning gently to coat. Sprinkle over the remaining 30 g cheddar.
- Melt the remaining 20 g butter and mix with the breadcrumbs and English mustard until evenly coated. Scatter the topping over the cauliflower cheese.
- Bake for 18 to 22 minutes until bubbling at the edges and the topping is crisp and golden. Leave to stand for 5 minutes before serving so the sauce thickens slightly.

Serving suggestions
This recipe pairs well with:
Tips
- Steam-drying the cauliflower after draining helps the sauce stay thick and stops the bake turning watery.
- For the crispest topping, spread the breadcrumbs evenly and keep them in a loose layer rather than packing them down.
- If serving to anyone vulnerable, make sure the bake is piping hot all the way through before eating.
Substitutions
- Replace Cheddar cheese with Gruyere cheese for a nuttier, more savoury finish.
- Replace English mustard with Dijon mustard for a milder, smoother heat.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; if the topping starts to darken, cover loosely and uncover for the last few minutes to re-crisp.
