Slow Cooker Chicken and Dumplings
Why this recipe works
- Slow-cooker efficiency: The chicken, vegetables and stock cook together in one pot, building a savoury base with little active work.
- Dumplings steam in the stew: Dropping the dough onto the bubbling broth lets the dumplings cook gently from below while staying soft and fluffy.
- Rich but balanced: Buttermilk dumplings, shredded chicken and a lightly thickened broth create a hearty texture without making the stew too heavy.

Timing notes
- Mostly hands-off: The long cooking time is largely unattended; the main active steps are shredding the chicken, thickening the broth and mixing the dumpling dough.
- Serve after steaming: The dumplings are at their lightest soon after cooking, while they are still puffed and the broth is hot.
Texture tips
- Handle the dough lightly: Mix the dumpling dough just until it comes together; overworking it can make the dumplings dense.
- Keep the stew bubbling: Add the dumplings only once the stew is hot and gently bubbling so they steam rather than sink into the broth.
- Adjust the broth if needed: If the stew thickens too much after the dumplings cook, loosen it with a splash of hot chicken stock before serving.
Ingredient notes
- Cold butter matters: Cold butter rubbed into the flour helps give the dumplings a softer, more tender texture.
- Buttermilk adds tenderness: Buttermilk brings gentle acidity to the dough, helping the dumplings stay soft while adding a subtle tang.
- Fresh finish: Dried thyme gives the broth a steady background flavour, while fresh parsley added at the end keeps the dish brighter.
Make-ahead tips
- Prepare the vegetables early: The carrot, celery and onion can be chopped in advance to make assembly quicker when starting the slow cooker.
- Reheat gently: Warm leftovers over low heat with a little extra chicken stock if needed, until the chicken and broth are piping hot.
- Freezer-friendly: Freeze in portions for up to 2 months. The dumplings will soften after defrosting, but the stew remains hearty and flavourful.

Instructions
- Cut the carrot and celery into small chunks and finely chop the onion. Add the chicken thighs, vegetables, dried thyme, chicken stock, salt and pepper to the slow cooker and stir to combine.
- Cover and cook on low for 5 hours, until the chicken is very tender and the vegetables are soft. Lift out the chicken, shred it with two forks, then return it to the slow cooker.
- In a small bowl, whisk 25 g plain flour with a few tablespoons of the hot broth until smooth, then stir it back into the slow cooker. Cover and cook on high for 15 minutes, until the broth lightly thickens.
- Meanwhile, make the dumplings: mix 180 g plain flour, baking powder and salt in a bowl. Rub in the cold butter with your fingertips until it looks like coarse crumbs, then stir in the buttermilk and most of the parsley to make a soft, sticky dough.
- Drop the dough onto the bubbling stew in 8 equal spoonfuls, spacing them out. Cover and cook on high for 25 minutes, until the dumplings are puffed and a skewer inserted into the centre comes out clean.
- Taste and adjust seasoning with a little more salt and pepper if needed. Sprinkle over the remaining parsley and serve hot in bowls.
Recipe notes
Tips
- Keep the lid on while the dumplings steam; lifting it releases heat and can make them heavy.
- If the stew looks too thick after adding the dumplings, stir in a splash of hot chicken stock and warm through for 2 to 3 minutes.
- Food safety: if serving vulnerable people, ensure the chicken is cooked until piping hot throughout before shredding and serving.
Substitutions
- Replace Fresh parsley with Fresh chives for a mild onion note in the dumplings.
- Replace Dried thyme with Italian seasoning for a slightly different herb profile.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, adding a splash of chicken stock if needed, until piping hot; dumplings will soften but still taste good. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
