Polenta con Funghi e Salsiccia (Polenta with Mushrooms and Sausage)
Why this recipe works
- Deep savoury base: Browning the sausage, onion and mushrooms before adding wine and stock creates a rich topping with good depth and a glossy finish.
- Creamy polenta contrast: The soft polenta gives the dish body and balances the meaty, mushroom-rich sauce.
- Hearty but simple: A short simmer and straightforward ingredients make it satisfying enough for dinner without becoming a long-cooked ragù.

Texture tips
- Keep the polenta smooth: Whisk the polenta in gradually and cook it gently, adding a little more stock if it thickens too much before serving.
- Avoid a grainy finish: Keep the heat low once the polenta is added and whisk often so the grains hydrate evenly.
Ingredient notes
- Choose full-flavoured sausage: Italian pork sausage brings seasoning, fat and savoury depth, so use one with a flavour you like.
- Mix mushrooms for better texture: A combination of mushrooms gives the topping more variety, with some pieces staying firm while others soften into the sauce.
Ingredient swaps
- Make it without wine: Replace the white wine with chicken stock and simmer briefly to keep the topping glossy and well seasoned.
- Change the herb finish: Fresh basil can replace parsley for a sweeter, more aromatic finish.
Make-ahead tips
- Store separately: Refrigerate the polenta and topping in separate airtight containers so the texture is easier to restore when reheating.
- Reheat gently: Warm the topping in a frying pan and loosen the polenta in a saucepan with a little stock, whisking until creamy again.

Instructions
- Put a large frying pan over medium-high heat and add the olive oil. Finely chop the onion, then add it to the pan with a pinch of the salt and cook for 4 to 5 minutes until softened.
- Squeeze the Italian pork sausage meat from its skins into the pan and break it up with a wooden spoon. Cook for 6 to 8 minutes until well browned and any liquid has cooked off.
- Slice the mushrooms and add them to the pan with a little black pepper. Cook for 6 to 8 minutes, stirring occasionally, until the mushrooms are browned and tender.
- Pour in the white wine and simmer for 2 to 3 minutes, scraping up any browned bits, until reduced by about half. Add 200 ml of the chicken stock and simmer for 3 to 4 minutes until glossy; keep the pan on very low heat while you make the polenta.
- Bring the remaining chicken stock to a simmer in a saucepan and whisk in the polenta in a steady stream. Cook over low heat for 10 to 12 minutes, whisking often, until thick and creamy; season with the remaining salt and a little more black pepper if needed.
- Finely chop the fresh parsley and stir most of it into the sausage and mushroom topping. Spoon the hot polenta into bowls and ladle over the topping, finishing with the remaining parsley.
Recipe notes
Tips
- For the best texture, whisk the polenta in gradually and keep the heat low so it thickens without catching on the base of the pan.
- If the topping reduces too far, loosen it with a splash of chicken stock until it coats the sausage and mushrooms.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the sausage is cooked through and the sauce is simmered until piping hot.
Substitutions
- Replace white wine with an equal amount of chicken stock for an alcohol-free version.
- Replace mushrooms with a mix of mushrooms for deeper flavour and texture.
- Replace fresh parsley with fresh basil for a different herb finish.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate the polenta and topping separately in airtight containers. Reheat the topping in a frying pan with a splash of chicken stock until piping hot; reheat the polenta gently in a saucepan with a little chicken stock, whisking until creamy.
