Tepsi Baytinijan (Iraqi Aubergine and Minced Beef Bake)

Tepsi baytinijan brings together the familiar comforts of an aubergine bake with the savoury depth of Iraqi home cooking. Slices of aubergine and tomato are layered with minced beef simmered in tomato purée, garlic and cumin, then baked until the vegetables soften into the sauce and the edges bubble richly. The dish is generous without being heavy: the aubergine turns silky, the tomatoes add brightness, and the lightly spiced meat sauce holds the layers together. Served hot from the baking dish with a scatter of parsley, it works well as a practical family dinner and reheats particularly nicely.

Why this recipe works

  • Better aubergine texture: Frying the aubergine before baking helps it soften fully and gives the finished dish a richer, more rounded flavour.
  • Savoury depth: Browning the beef with onion, garlic, cumin and tomato purée builds a robust sauce before the bake goes into the oven.
  • Settles well: A short rest after baking lets the sauce thicken slightly and helps the layers hold together when served.

Authenticity notes

  • Iraqi home-style bake: Tepsi baytinijan is typically served straight from the tray, with the aubergine, tomato and meat sauce baked together until soft and saucy.
  • Lamb variation: Minced lamb is a common alternative to beef and gives the dish a fuller, more traditional flavour profile.

Texture tips

  • For softer aubergine: If the aubergines are large or seedy, peeling them in alternating strips before slicing gives a more tender finish.
  • Avoid a watery bake: Let the meat sauce simmer until slightly thickened before layering, so the tomatoes and aubergine bake in a rich sauce rather than excess liquid.

Make-ahead tips

  • Make ahead: The bake can be cooked in advance, cooled completely and refrigerated in a sealed container for up to 3 days.
  • Reheating: Reheat in a 180°C (355°F) oven until piping hot, or microwave in short bursts, stirring the sauce between bursts where possible.
  • Freezing: Freeze in portions after cooking and cooling, then defrost overnight in the fridge before reheating.

Ingredient notes

  • Choosing aubergines: Look for firm, glossy aubergines with smooth skin; they are easier to slice neatly and tend to cook down evenly.
  • Tomato flavour: Ripe tomatoes give the sauce a better balance of sweetness and acidity, which is important in a simple bake like this.

  1. Heat the oven to 200°C (390°F). Slice the aubergines into 1.5 cm rounds and slice the tomatoes into 1 cm rounds. Finely chop the onion, crush the garlic, and roughly chop the parsley.
  2. Heat 3 tbsp of the olive oil in a large frying pan over medium-high heat. Fry the aubergine in batches for 2 to 3 minutes per side until lightly golden, adding a little more oil if the pan looks dry. Transfer to a plate.
  3. Add the remaining olive oil to the pan and cook the onion with a pinch of the salt for 6 to 8 minutes until softened. Add the garlic and ground cumin and cook for 30 seconds until fragrant. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned.
  4. Stir in the tomato purée, black pepper, and the remaining salt. Add 250 ml water and bring to a gentle simmer for 3 to 4 minutes, scraping up any browned bits, until slightly thickened. Take off the heat and stir in half the parsley.
  5. Spoon a thin layer of the meat sauce into a baking dish, then layer in half the aubergine and half the tomatoes. Add the remaining meat sauce, then finish with the remaining aubergine and tomatoes. Press the layers down gently so they sit snugly in the sauce.
  6. Cover the dish tightly and bake for 35 minutes. Uncover and bake for a further 10 to 12 minutes until the aubergine is very tender and the sauce is rich and bubbling at the edges. Rest for 10 minutes, then scatter over the remaining parsley and serve hot, spooned from the tray.

  • Replace Minced beef with minced lamb for a more traditional, fuller flavour.
  • Replace Fresh parsley with fresh coriander for a brighter, more citrusy finish.
