Jordanian Zarb (Slow-Cooked Lamb and Spiced Rice)
Why this recipe works
- Spices build depth: Cumin, cinnamon and cardamom are briefly warmed with the browned lamb, giving the rice and stock a rounded, aromatic base.
- One-pot flavour: The rice cooks directly in the lamb juices, so it absorbs the savoury stock and spices rather than being served as a plain side.
- Tender, satisfying result: A long, gentle simmer softens the lamb shoulder, while the final steaming stage keeps the basmati separate and fragrant.

Timing notes
- Mostly hands-off cooking: The active work is mainly chopping, browning and adding the rice; most of the time is the low simmer that tenderises the lamb.
- Do not skip the covered rest: Leaving the pot covered after the rice cooks allows the grains to finish steaming and absorb the remaining juices evenly.
Texture tips
- Keep the simmer gentle: A very low simmer helps the lamb become tender without tightening or drying out.
- Rinse the rice well: Rinsing the basmati until the water runs mostly clear removes excess starch and helps the grains stay lighter.
Ingredient notes
- Use a slow-cooking cut: Lamb shoulder suits this dish because it becomes tender during the long simmer and gives the rice a richer flavour.
- Finish with nuts for contrast: Roasted almonds add a crisp, nutty contrast to the soft lamb and spiced rice.
Make-ahead tips
- Reheat gently: Warm leftovers covered with a little water so the rice steams back to softness without drying out.
- Freezer-friendly: Cool the cooked zarb quickly before freezing, then defrost overnight in the fridge and reheat until piping hot.

Ingredients
Instructions
- Peel and finely chop the yellow onion. Peel the garlic cloves and crush them.
- Heat the olive oil in a Dutch oven over medium-high heat. Add the onion with a pinch of the fine sea salt and cook for 6 to 8 minutes until softened and lightly golden.
- Cut the lamb shoulder into large chunks and season with the remaining fine sea salt and black pepper. Add the lamb to the pot and brown for 6 to 8 minutes, turning so you get colour on most sides.
- Stir in the ground cumin, ground cinnamon and ground cardamom for 30 seconds until fragrant, then add the garlic. Pour in the lamb stock and bring to a gentle simmer, scraping up any browned bits from the base.
- Cover and cook on a very low simmer for 75 to 85 minutes, stirring once or twice, until the lamb is very tender. If the liquid reduces too quickly, lower the heat so it stays at a gentle simmer.
- Rinse the basmati rice under cold water until the water runs mostly clear. Stir the rice into the pot, making sure it is mostly submerged in the cooking liquid.
- Bring back to a gentle simmer, then cover tightly and cook on low for 15 minutes. Turn off the heat and leave, covered, for 10 minutes so the rice finishes steaming and absorbs the juices.
- Fluff the rice gently with a spoon, folding through the lamb so it stays in generous pieces. Serve topped with the roasted almonds.
Recipe notes
Tips
- Keep the heat low once the stock is added; a gentle simmer keeps the lamb juicy and stops the spices from tasting harsh.
- If you prefer extra crunch, warm the roasted almonds in a dry frying pan for 1 to 2 minutes just before serving, watching closely so they do not scorch.
Substitutions
- Replace lamb shoulder with lamb leg boneless for a leaner result; start checking for tenderness 15 minutes earlier.
- Replace roasted almonds with pistachios for a different nutty crunch.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Freeze for up to 2 months; defrost overnight in the fridge and reheat gently in a covered pan with a splash of water until piping hot.
