Vegan Stuffed Aubergines with Spiced Chickpeas
Why this recipe works
- Soft aubergine, hearty filling: Roasting the aubergines until deeply tender gives a soft base that contrasts well with the chickpeas.
- Warm, smoky depth: Cumin, garlic and smoked paprika build savoury depth in the tomato sauce without needing a long simmer.
- Bright finish: Lemon juice lifts the rich tomato and roasted aubergine, keeping the final dish fresh rather than heavy.

Texture tips
- Roast until fully collapsed: The aubergine should be completely soft before filling; if the flesh still resists a spoon, return it to the oven for a little longer.
- Let the sauce reduce: Simmer the chickpea mixture until it thickens enough to sit in the aubergine halves without running straight off.
Ingredient notes
- Smoked paprika matters: Smoked paprika gives the filling its rounded, smoky character; regular paprika will taste gentler and less complex.
- Adjust the lemon at the end: Add the citrus after simmering so its brightness stays clear, then taste and adjust before serving.
- Score without piercing: Scoring the aubergine helps the flesh soften quickly, but keeping the skin intact creates a natural shell for the filling.
Make-ahead tips
- Cook components in advance: The aubergines and chickpea filling can be cooked ahead, cooled, then assembled before reheating.
- Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, or microwave in short bursts to avoid drying out the aubergine.
- Freezes well in portions: Cool completely before freezing, then thaw overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Halve the aubergines lengthways and score the flesh in a criss-cross, taking care not to cut through the skin. Put on a baking tray, drizzle with 2 tbsp olive oil and sprinkle with 1/2 tsp fine sea salt.
- Roast the aubergines for 30 to 35 minutes, until deeply tender and collapsing at the edges. Meanwhile, finely chop the onion and crush the garlic.
- Warm the remaining 2 tbsp olive oil in a large frying pan over a medium heat. Cook the onion with 1/2 tsp fine sea salt for 6 to 8 minutes, stirring, until softened and lightly golden. Stir in the garlic, ground cumin and smoked paprika and cook for 1 minute until fragrant.
- Add the canned chopped tomatoes and bring to a gentle simmer. Tip in the chickpeas (drained and rinsed) and simmer for 8 to 10 minutes, until the sauce thickens slightly and the chickpeas are hot. Take off the heat and squeeze in the lemon juice, then taste and add the remaining fine sea salt if needed.
- When the aubergines are ready, use the back of a spoon to press down the flesh and create a well. Spoon the spiced chickpeas and tomato sauce into each aubergine half. Chop the parsley and scatter over the top, then serve warm.
Recipe notes
Tips
- For the best texture, roast the aubergines until the flesh is completely soft; if they still feel firm, give them another 5 minutes.
- If you like a brighter finish, grate a little lemon zest over the top just before serving.
- If serving to anyone who should avoid raw citrus for medical reasons, add the lemon juice while the sauce is still hot so it warms through.
Substitutions
- Replace Fresh parsley with Fresh coriander for a different herbal finish.
- Replace Smoked paprika with Ground paprika for a milder, less smoky flavour.
- Replace Lemon with Lime for a sharper, more aromatic acidity.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, or microwave in short bursts. Freeze portions for up to 2 months and thaw overnight in the fridge before reheating.
