Rillettes de Porc sur Toast (Pork Rillettes on Toast)

Pork rillettes sit firmly in the French charcuterie tradition: tender pork cooked slowly in its own rendered fat, shredded finely, then chilled into a rich, spoonable spread. Here, pork shoulder and fatback are gently flavoured with garlic, thyme and bay before being worked into a glossy, cohesive texture. Served on crisp sourdough toast, the rillettes are savoury, deeply porky and deliberately generous, with pickled onions alongside to bring sharpness and lift. It makes a satisfying lunch, starter or informal sharing plate, especially when allowed to soften slightly before spreading.

Why this recipe works

  • Slow-cooked tenderness: Cooking the pork gently with fatback allows the meat to become tender enough to shred into a classic rillette texture.
  • Rich, spreadable finish: Stirring the finely shredded pork back through the rendered fat creates a glossy, cohesive spread once chilled.
  • Sharp contrast: Pickled onions cut through the richness of the pork and make the toast feel more balanced.

Timing notes

  • Mostly hands-off: The active work is brief; the long oven time is what gives the pork its pull-apart texture.
  • Chill before serving: The rillettes need time in the fridge to firm up into a proper spread rather than a loose shredded pork mixture.
  • Serve slightly softened: Let chilled rillettes sit for 10 minutes before spreading, unless the kitchen is warm.

Ingredient notes

  • Fatback matters: Fatback supplies the richness and structure that make rillettes spreadable; using very lean pork will give a drier result.
  • Use fresh thyme if possible: Fresh thyme perfumes the pork gently during the slow cook without overpowering the meat.
  • Keep something sharp alongside: Pickled onions or cornichons are not just garnish; their acidity balances the richness of the pork.

Texture tips

  • Shred finely: The finer the pork is shredded, the more cohesive and spreadable the finished rillettes will be.
  • Stir while still warm: Mix the shredded pork thoroughly with the rendered fat while it is still fluid so the texture becomes glossy rather than separated.

Make-ahead tips

  • Ideal for preparing ahead: Rillettes hold well in the fridge, making them useful for lunches, starters or casual entertaining.
  • Freeze after cooking: Freeze in an airtight container, then defrost overnight in the fridge and stir well before serving.
  • Toast just before serving: Keep the rillettes chilled and toast the bread at the last moment so the sourdough stays crisp.

Instructions

  1. Heat the oven to 150°C (300°F). Cut the pork and fatback into large chunks, then lightly crush the garlic cloves.
  2. Put the pork, fatback, garlic, thyme, bay leaves, fine sea salt and black pepper into a Dutch oven and toss well. Cover with a lid and cook in the oven for 2 hours 30 minutes, stirring once or twice, until the pork is very tender and pulls apart easily.
  3. Remove and discard the thyme sprigs and bay leaves, then lift out the garlic cloves. Shred the pork thoroughly with two forks, then stir it back through the rendered fat until it looks moist and spreadable; taste and adjust with a little more fine sea salt and black pepper if needed.
  4. Spoon the rillettes into a bowl, press the surface down, and cool to room temperature. Cover and chill for at least 30 minutes, or until firm enough to spread.
  5. Toast the sourdough bread until golden. Spread the rillettes generously over the toast and serve with the pickled onions on the side.

Recipe notes

Tips

  • For the best texture, shred the pork very finely, then stir until the fat is fully emulsified and the mixture looks glossy and cohesive.
  • If serving later, let the rillettes sit at room temperature for 10 minutes so it spreads easily, but keep it chilled if your kitchen is warm.

Substitutions

  • Replace sourdough bread with country bread for a milder, softer toast.
  • Replace pickled onions with cornichons for a sharper, more traditional accompaniment.

Storage

  • Refrigerate up to 4 days
  • Keep the rillettes covered in the fridge. Freeze in an airtight container for up to 2 months; defrost overnight in the fridge and stir well before serving.
