Frittelle di Carnevale (Venetian Carnival Fritters)
Why this recipe works
- Yeasted batter: The batter rises until bubbly and aerated, giving the fritters a light, tender interior rather than a dense crumb.
- Simple aromatic depth: Vanilla, lemon zest and raisins add fragrance and sweetness without making the batter heavy.
- Golden outside, soft centre: Small spoonfuls of batter fry quickly, developing a crisp golden surface while staying soft and puffy inside.

Authenticity notes
- Carnival tradition: Frittelle are closely associated with Carnevale in Venice and the Veneto, where they are served as festive sweet fritters.
- Raisin and citrus style: Raisins and lemon zest are classic additions in this style, adding sweetness and brightness to the yeasted batter.
Timing notes
- Judge the rise by appearance: The batter should look puffy, bubbly and slightly thicker, but still spoonable; cooler kitchens may need a little longer.
- Best served warm: Dust the fritters after draining and serve while warm, when the contrast between the crisp outside and soft centre is at its best.
- Eat the day they are made: Like most fried doughs, these lose their delicate texture as they sit, so they are at their best shortly after frying.
Common mistakes
- Letting the oil drift: Oil that is too cool makes the fritters absorb excess fat; oil that is too hot browns them before the centre cooks through.
- Frying too many at once: Work in batches so the oil temperature stays steady and the fritters have room to puff and turn evenly.
- Using batter that is too stiff: After proving, the batter should be thick but spoonable. If it tightens too much, loosen it gradually with a little milk.

Ingredients
Instructions
- Warm the milk until just lukewarm, then pour it into a mixing bowl and whisk in the caster sugar and active dry yeast. Leave for 10 minutes, until foamy on top.
- Whisk in the plain flour and fine sea salt until smooth, then beat in the eggs and vanilla extract. Finely zest the lemon into the batter, then stir in the raisins.
- Cover the bowl and leave the batter to rise in a warm place until puffy and aerated. It should look bubbly and slightly thicker, but still spoonable.
- Heat the sunflower oil in a large pot to 175°C (350°F). Using two teaspoons, drop heaped spoonfuls of batter into the oil, frying in batches so the temperature stays steady.
- Fry for 3 to 4 minutes, turning once or twice, until the fritters are deep golden and cooked through. Lift out with a slotted spoon and let them drain briefly.
- Dust generously with icing sugar and serve warm. For the best texture, eat them the day they are made.
Recipe notes
Tips
- Keep the oil close to 175°C (350°F): if it is cooler the fritters will absorb oil, and if it is hotter they will brown before cooking through.
- If the batter feels too thick after proving, whisk in a splash of whole milk to bring it back to a thick, spoonable consistency.
- If serving to young children, take extra care with hot oil and ensure the fritters are cooled slightly before eating.
Substitutions
- Replace vanilla extract with finely grated lemon zest from an extra lemon for a brighter citrus flavour.
- Replace caster sugar with icing sugar in the batter for a slightly softer, more tender crumb.
Storage
- Refrigerate up to 1 days
- Best eaten warm on the day they are made. If needed, store cooled fritters in an airtight container in the fridge and reheat in a 180°C (355°F) oven for 5 to 7 minutes, then dust again with icing sugar.
