Vegan Lentil Shepherd’s Pie
Why this recipe works
- Deep savoury base: Browning the mushrooms, softening the vegetables and cooking out the tomato purée gives the lentil filling a fuller, more rounded flavour.
- Creamy dairy-free mash: Yukon Gold potatoes and olive oil create a smooth topping without relying on butter or milk.
- Hearty but balanced: The thick lentil gravy and soft potato topping deliver the familiar richness of a baked pie while keeping the dish fully vegan.

Ingredient notes
- Choose lentils that hold their shape: Dried green lentils are a good fit because they become tender without collapsing completely into the gravy.
- Build flavour from the mushrooms: Let the mushrooms release their liquid and cook down well before adding the tomato purée for a deeper, more savoury filling.
- Season carefully with soy sauce: Soy sauce adds both salt and umami, so taste the filling before adding any extra seasoning.
Texture tips
- Rough up the potato topping: Dragging a fork over the mash creates ridges that catch in the oven and brown more effectively.
- Keep the filling thick: The lentil mixture should be rich and spoonable rather than loose before it goes into the baking dish.
- Mash while hot: Potatoes mash more smoothly when they are still hot and well drained, which helps the topping stay creamy rather than watery.
Make-ahead tips
- Assemble in advance: The filling and mash can be prepared ahead, layered in the baking dish and refrigerated before baking.
- Freezes well: Cool the baked pie completely before freezing, then thaw overnight in the fridge before reheating.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, uncovering near the end if the topping needs to dry slightly.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Peel the potatoes and cut into even chunks.
- Put the potatoes in a large pot, cover with cold water, and bring to the boil. Simmer for 15 to 18 minutes until very tender, then drain well in a colander and return to the pot.
- Mash the potatoes with 3 tbsp of the olive oil until smooth and creamy. Set aside with the lid on to keep warm.
- Meanwhile, peel and finely chop the onion and carrots. Slice the mushrooms.
- Warm the remaining 2 tbsp olive oil in a saucepan over medium heat. Cook the onion and carrots for 6 to 8 minutes until softened, then add the mushrooms and cook for 5 minutes until their liquid has mostly evaporated.
- Stir in the tomato purée and cook for 1 minute. Add the chopped tomatoes, lentils, vegetable stock, and soy sauce, then bring to a gentle simmer.
- Simmer for 25 to 30 minutes, stirring occasionally, until the lentils are tender and the gravy is thick and rich. If it looks dry before the lentils are tender, add a splash of water and keep simmering.
- Tip the lentil filling into a baking dish and spread it out evenly. Spoon the mashed potatoes over the top and spread to the edges; rough up the surface with a fork so it browns nicely.
- Bake for 18 to 20 minutes until bubbling at the edges and golden on top. Rest for 5 minutes before serving so the filling settles.
Recipe notes
Tips
- For a deeper, more savoury filling, let the mushrooms cook until they are well browned before adding the tomato purée.
- If you like a crisper top, finish under a hot grill for 2 to 3 minutes, watching closely so it does not catch.
Substitutions
- Replace Cremini mushrooms with Portobello mushroom for a meatier texture.
- Replace Soy sauce with Dark soy sauce for a deeper colour and slightly sweeter, richer flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; if frozen, thaw overnight in the fridge before reheating.
