Trippa alla Fiorentina (Florentine Tripe Stew)
Why this recipe works
- Gentle cooking: A low, steady simmer tenderises the tripe without toughening it, while allowing the tomato sauce to reduce gradually.
- Built-in depth: Onion, carrot and celery create a sweet savoury base, with white wine and tomatoes adding acidity and body.
- Rich final finish: Parmesan stirred in off the heat rounds out the sauce with saltiness, richness and a satisfying umami note.

Authenticity notes
- Florentine style: This version follows the recognisable Tuscan approach: tripe cooked with soffritto, tomato and grated hard cheese rather than heavy spices.
- Served simply: It is typically served hot, spooned straight from the pot with extra Parmesan over the top.
Timing notes
- Mostly hands-off: The active work is mainly chopping and starting the sauce; most of the time is the slow simmer that softens the tripe.
- Serve after finishing: Once the Parmesan has been stirred through, serve while the sauce is hot and glossy.
Common mistakes
- Boiling too hard: Keep the sauce at a gentle simmer; aggressive boiling can toughen the tripe and make the tomato catch on the base.
- Missing the tenderness point: If using pre-cooked tripe, start checking earlier and stop once it is yielding but still has a little bite.
- Letting the sauce tighten: If the sauce reduces too much before the tripe is tender, loosen it with a small splash of water and continue gently.
Ingredient notes
- Choosing tripe: Cleaned beef tripe is essential, and pre-cooked tripe will usually need less time than raw or only briefly blanched tripe.
- Cheese matters: Use finely grated Parmesan so it melts evenly into the hot sauce; Grana Padano gives a milder finish if preferred.

Ingredients
Instructions
- Finely dice the onion, carrot and celery. Cut the tripe into bite-sized strips if it is not already cut. Finely grate the parmesan and set it aside.
- Warm the olive oil in a Dutch oven over medium heat. Add the onion, carrot and celery with a pinch of the salt and cook for 10 to 12 minutes, stirring, until softened and sweet but not browned.
- Add the tripe and season with the remaining salt and the black pepper. Cook for 5 to 7 minutes, stirring, until the tripe is hot and lightly coated in the soffritto. Pour in the white wine and simmer for 3 to 4 minutes to reduce slightly.
- Stir in the chopped tomatoes and bring to a gentle simmer. Cover with the lid slightly ajar and cook on low for 80 to 85 minutes, stirring every so often, until the tripe is tender and the sauce is rich and thick. If the sauce tightens too much, add a small splash of water and keep the simmer gentle.
- Take the pot off the heat and stir through most of the parmesan, reserving a little for serving. Taste and adjust with a little more salt or pepper if needed. Serve straight away with the reserved parmesan sprinkled on top.
Recipe notes
Tips
- Keep the simmer very gentle; a hard boil can make the tripe tough and can catch the tomato sauce on the base of the pot.
- If your tripe is pre-cooked, start checking for tenderness after 45 to 60 minutes and stop cooking once it is yielding but still has a little bite.
Substitutions
- Replace White wine with dry red wine for a deeper, more robust sauce.
- Replace Parmesan with Grana Padano for a slightly milder finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, stirring often, until piping hot; add a small splash of water if the sauce has thickened too much.
