Peruvian Causa Rellena (Chilled Potato Layer Cake)

Served cold and cut into tidy slices, causa rellena is one of Peru’s most recognisable savoury potato dishes: a layered preparation of smooth mashed potato sharpened with lime and coloured with ají amarillo. The seasoned potato acts almost like a soft terrine, enclosing a creamy filling and holding its shape after chilling. In this version, tuna, mayonnaise, red onion and firm avocado give the centre richness, freshness and a gentle bite. It makes a practical make-ahead lunch or starter, with a bright citrus lift, mild chilli warmth and the clean, composed look that makes causa so distinctive.

Why this recipe works

  • Bright, balanced flavour: Lime juice cuts through the richness of the mayonnaise and tuna while lifting the mild heat of the ají amarillo.
  • Clean layered texture: Smooth mashed potato firms as it cools, helping the causa hold its shape when unmoulded and sliced.
  • Recognisable causa structure: Seasoned potato, a creamy filling and a chilled finish give the dish its distinctive Peruvian layered style.

Timing notes

  • Chill before unmoulding: A short chill helps the potato layers firm up, but a longer chill gives cleaner edges and neater slices.
  • Serve cold: Causa is best served straight from the fridge or lightly chilled, before the avocado softens or darkens.

Ingredient notes

  • Ají amarillo paste: Ají amarillo gives causa its characteristic yellow colour, gentle heat and fruity chilli flavour.
  • Choose firm avocado: Use avocado that is ripe but still sliceable so it stays distinct between the potato and tuna layers.
  • Drain the tuna well: Excess liquid can loosen the filling and make the layers harder to slice cleanly.

Texture tips

  • Mash while hot: Mashing the potatoes while they are hot gives a smoother base before the lime and chilli paste are mixed in.
  • Let the potato cool: Cooling the seasoned potato before assembly makes it easier to press into the moulds without smearing the filling.

Authenticity notes

  • A chilled Peruvian classic: Causa is commonly served cold as a starter, light lunch or composed salad, with fillings such as tuna, chicken or seafood.
  • Flexible fillings: The potato base is the defining element; the filling can vary, but creamy seafood or poultry fillings are especially common.

  1. Put the potatoes in a large pot, cover with cold water, and bring to the boil. Cook for 15 to 20 minutes, until a knife slides in easily. Drain well and let the steam escape for 2 minutes.
  2. While the potatoes cook, finely slice the red onion and squeeze the lime. Halve the avocado, remove the stone, and slice the flesh. Drain the tuna and flake it into a bowl.
  3. Mash the hot potatoes until smooth, then mix in the ají amarillo paste and about half the lime juice. Taste and add a little more lime juice if you want it sharper. Let the potato mixture cool to room temperature so it firms up.
  4. Stir the mayonnaise into the tuna, then fold in most of the red onion, reserving a little for the top. Taste and add a squeeze of the remaining lime juice if needed. Keep the filling chilled while you assemble.
  5. To assemble, press half the potato mixture into two ramekins (or a small mould), smoothing the surface. Add a layer of avocado, then spoon over the tuna mixture. Top with the remaining potato mixture and smooth again.
  6. Cover and chill for at least 20 minutes, until firm enough to unmould cleanly. Turn out onto plates, sprinkle with the reserved red onion, and slice into neat portions. Serve cold.

Recipe notes

Tips

  • For the cleanest slices, chill the assembled causa for 30 to 60 minutes and wipe the knife between cuts.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised mayonnaise.

Substitutions

  • Replace Mayonnaise with avocado-oil-mayonnaise for a slightly lighter flavour.
  • Replace Red onion with shallot for a milder, sweeter bite.

Storage

  • Refrigerate up to 1 days
  • Keep covered in the fridge and serve cold. The avocado is best on the day, as it can darken and soften over time.
