Paneer Bhurji with Toasted Bread
Why this recipe works
- Ready quickly: Crumbling the paneer means it heats through in minutes, keeping the whole dish suitable for a fast lunch or weeknight meal.
- Layered spice: Cumin, turmeric, ginger, green chilli and garam masala build warmth without needing a long simmer.
- Soft paneer, crisp toast: Juicy spiced paneer pairs well with golden toast, giving the dish a satisfying contrast in texture.

Adjust the heat
- Make it milder: Remove the seeds from the green chilli before chopping, or use less chilli for a gentler heat.
- Increase the heat: Keep the chilli seeds in, or add a little extra fresh chilli if you prefer a sharper finish.
- Balance at the end: A squeeze of lemon and fresh coriander help brighten the spices and keep the heat feeling rounded.
Ingredient notes
- Paneer texture: Crumble the paneer into uneven pieces rather than grating it finely; the mixture will feel more substantial and less pasty.
- Use ripe tomatoes: Ripe tomatoes soften quickly and create the juicy base that keeps the bhurji moist.
- Fresh herbs matter: Fresh coriander gives the cleanest finish here; mint works as a brighter alternative but will change the flavour profile.
Texture tips
- Keep the paneer soft: Stop cooking once the paneer is hot and coated in the spiced tomato mixture; extended cooking can make it dry.
- Toast just before serving: Prepare the bread at the end so it stays crisp against the juicy bhurji.
Make-ahead tips
- Cook ahead: The paneer bhurji can be made in advance and refrigerated in a sealed container for up to 2 days.
- Reheat gently: Warm it in a frying pan over a low to medium heat with a splash of water until piping hot.
- Toast fresh: For the best texture, toast the bread only when you are ready to serve.

Ingredients
Instructions
- Crumble the paneer into small, uneven pieces. Finely chop the onion, grate the ginger, finely chop the green chilli, and dice the tomatoes. Roughly chop the coriander and cut the lemon into wedges.
- Heat the ghee in a frying pan over a medium heat. Add the onion and cook for 4 to 5 minutes until softened and lightly golden. Stir in the ginger and green chilli and cook for 30 seconds until fragrant.
- Stir in the ground cumin and ground turmeric for 20 seconds. Add the tomatoes and cook for 3 to 4 minutes until they soften and turn juicy. Keep the heat at medium so the mixture stays moist rather than drying out.
- Add the paneer and toss well so it is coated in the spiced tomato mixture. Cook for 2 to 3 minutes, stirring gently, until the paneer is hot and the bhurji looks juicy and well combined. Stir in the garam masala and most of the coriander, reserving a little to finish.
- Toast the white bread until golden. Spoon the paneer bhurji over the toast or serve alongside, then finish with the reserved coriander. Squeeze over lemon to taste and serve straight away.
Recipe notes
Tips
- For a softer, juicier bhurji, keep the heat at medium and stop cooking as soon as the paneer is hot; overcooking can make it dry.
- If you like it hotter, keep the green chilli seeds in; for a milder version, remove them before chopping.
- If serving to anyone who is pregnant, elderly, or immunocompromised, ensure the paneer is piping hot throughout before serving.
Substitutions
- Replace ghee with butter for a similar richness.
- Replace white bread with brioche bread for a softer, slightly sweeter toast.
- Replace fresh coriander with fresh mint for a different, fresh finish.
Storage
- Refrigerate up to 2 days
- Cool the paneer bhurji quickly and refrigerate in a sealed container. Reheat gently in a frying pan over a low to medium heat with a splash of water until piping hot; toast the bread fresh for serving.
