Quick Dal Tadka with Jeera Rice
Why this recipe works
- Tempered spice finish: The cumin, garlic and dried chilli are bloomed in hot ghee, giving the dal a more aromatic finish than simmering the spices alone.
- Naturally creamy lentils: Red lentils break down quickly as they cook, creating a soft, spoonable dal without needing cream.
- Complete with rice: Jeera rice turns the dal into a satisfying meal, with toasted cumin echoing the flavour of the tadka.

Adjust the heat
- For a gentler dal: Use less dried chilli, or remove it before serving so the tadka keeps its aroma without much heat.
- For more heat: Add an extra dried chilli to the tadka, keeping it moving so the chilli toasts rather than scorches.
- Finish with citrus: A squeeze of lemon brightens the dal and helps balance the richness of the ghee and the warmth of the chilli.
Common mistakes
- Do not overcook the tadka: Take the ghee off the heat as soon as the garlic is pale golden; burnt garlic will make the dal taste bitter.
- Watch the dal texture: Red lentils thicken as they sit, so loosen the dal with a little water if it becomes too dense before serving.
- Rest the rice: Leaving the jeera rice covered after cooking lets the grains finish steaming and makes them easier to fluff.
Ingredient notes
- Use red lentils for speed: Red lentils cook quickly and collapse into a creamy base, making them well suited to a fast dal.
- Ghee adds depth: Ghee gives the tadka a nutty richness and carries the toasted spice aroma effectively.
- Lemon to taste: Add lemon at the table rather than during simmering, so each serving can be brightened without dulling the lentils.
Make-ahead tips
- Store dal and rice separately: Keeping the dal and rice in separate containers helps the rice stay lighter and prevents it absorbing too much liquid.
- Reheat with moisture: Warm the dal with a splash of water until piping hot, and reheat the rice covered with a little water until steaming.
- Freeze the dal: The dal freezes well after cooling; the rice is best refrigerated and reheated separately for the freshest texture.

Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear. Set it aside to drain while you start the dal.
- Rinse the red lentils, then tip them into a saucepan with the water, ground turmeric and fine sea salt. Bring to the boil, then reduce to a gentle simmer for 10 to 12 minutes, stirring now and then, until the lentils are soft and creamy.
- While the lentils simmer, cut the tomatoes into small pieces and finely slice the garlic. Roughly chop the fresh coriander and cut the lemon into wedges.
- Stir the tomatoes into the dal and simmer for 5 minutes until the tomatoes soften and the dal thickens slightly. If it looks too thick, loosen with a splash of water.
- For the jeera rice, heat 1 tbsp of the ghee in a small pot over medium heat. Add 1 tsp of the cumin seeds and cook for 30 seconds until fragrant, then stir in the drained rice.
- Add the water to the rice, bring to the boil, then cover and cook on low for 10 minutes. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
- For the tadka, heat the remaining ghee in a small saucepan over medium heat. Add the remaining cumin seeds, garlic and dried red chilli and cook for 45 to 60 seconds until the garlic turns pale golden and the spices smell toasted.
- Pour the sizzling tadka over the dal and gently stir once or twice, keeping some of the spiced ghee on the surface. Serve with the jeera rice, scatter over the fresh coriander, and finish with lemon to taste.
Recipe notes
Tips
- Keep the tadka moving and take it off the heat as soon as the garlic turns pale golden; it can burn quickly and turn bitter.
- If you prefer a smoother dal, whisk it vigorously for 20 to 30 seconds at the end to break down the lentils further.
- If serving young children, use 1 dried red chilli and remove it before serving to keep the heat gentle.
Substitutions
- Replace ghee with unsalted butter for a similar richness.
- Replace fresh coriander with fresh mint for a different, fresh finish.
- Replace lemon with lime for a sharper citrus note.
Storage
- Refrigerate up to 3 days
- Cool the dal and rice quickly, then refrigerate in separate airtight containers. Reheat the dal in a saucepan with a splash of water until piping hot; reheat the rice covered in a microwave with a spoonful of water until steaming.
