Southwest Quinoa Bowl

A Southwest quinoa bowl brings the format of a satisfying grain bowl together with the bold, fresh flavours often associated with Southwestern-style cooking. Fluffy quinoa forms the base, with black beans for substance and cumin-roasted sweet potato adding sweetness, warmth and browned edges. The tomato, red onion and jalapeno salsa keeps the bowl lively, while ripe avocado softens the heat with a creamy finish. Lime juice and fresh coriander are key here, sharpening the beans and vegetables so the finished bowl feels bright rather than heavy. It works well warm, but is just as useful at room temperature for a make-ahead lunch.

Why this recipe works

  • Good texture contrast: Fluffy quinoa, tender roasted sweet potato, creamy avocado and fresh salsa give the bowl a varied, satisfying texture.
  • Freshness balances the richness: Lime juice and tomato salsa lift the beans, avocado and roasted sweet potato so the bowl feels bright rather than heavy.
  • Useful for make-ahead meals: The quinoa, beans and sweet potato can be stored together, while the salsa and avocado stay separate until serving.

Adjust the heat

  • For a gentler bowl: Remove the jalapeño seeds and white pith before chopping, or use less jalapeño in the salsa.
  • For more heat: Keep some of the jalapeño seeds in the salsa, or add extra chopped jalapeño to taste just before serving.

Make-ahead tips

  • Keep the fresh toppings separate: Store the quinoa, beans and sweet potato together, but keep the salsa and avocado separate to preserve their texture and freshness.
  • Reheat only the base: Warm the quinoa, beans and sweet potato until piping hot, then add the salsa, avocado, coriander and lime after reheating.
  • Prep the vegetables in advance: The sweet potato can be cut ahead and the salsa ingredients prepared in advance, but slice the avocado at the last moment to reduce browning.

Ingredient notes

  • Rinse the quinoa well: Rinsing helps remove quinoa’s naturally bitter coating and gives the cooked grains a cleaner flavour.
  • Use ripe avocado and tomato: A ripe avocado gives the bowl its creamy finish, while a ripe tomato makes the salsa juicier and more flavourful.
  • Cumin adds warmth: Ground cumin gives the roasted sweet potato a warm, savoury flavour that fits the Southwest-style profile.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm cubes, then toss on a baking tray with the olive oil and ground cumin.
  2. Roast the sweet potato for 20 to 25 minutes, turning once, until tender and browned at the edges. While it roasts, rinse the quinoa well under cold water.
  3. Cook the quinoa in a saucepan of boiling water for 12 to 15 minutes until the grains are tender but still have a little bite. Drain well and return to the pan for 1 minute off the heat to steam-dry, then fluff with a fork.
  4. Drain and rinse the black beans, then warm them in a mixing bowl with a squeeze of lime and a pinch of salt. Finely dice the tomato and red onion, finely chop the jalapeno, and roughly chop the coriander.
  5. Stir the tomato, red onion, jalapeno and most of the coriander together with the juice of the remaining lime, plus a pinch of salt. Halve the avocado, remove the stone, and slice the flesh.
  6. Divide the quinoa between two bowls and top with the black beans and roasted sweet potato. Spoon over the tomato salsa, add the avocado, and finish with the remaining coriander and any extra lime juice to taste.
