Scotch Eggs
Why this recipe works
- Crisp, golden coating: Flour, beaten egg and breadcrumbs create a firm crust that protects the sausage layer as it fries.
- Mustard-seasoned pork: English and Dijon mustard sharpen the richness of the sausage meat without overpowering the egg.
- Good warm or cold: Scotch eggs hold their structure well, making them suitable for serving straight after frying or chilled later.

Timing notes
- Choose the yolk to suit the serving: A shorter boil gives a slightly soft centre, while a longer boil is better when serving to anyone who needs fully cooked eggs.
- Cool before peeling: Cooling the boiled eggs in cold water firms the whites and makes them easier to peel cleanly before wrapping.
Texture tips
- For a lighter crunch: Panko breadcrumbs can be used in place of standard breadcrumbs for a more open, crisp coating.
- Set the coating before frying: Chilling the breadcrumbed eggs briefly helps the crumb adhere and gives a neater crust in the oil.
Common mistakes
- Avoid overheating the oil: Keep the oil close to 170°C (340°F); if it runs too hot, the crumbs can brown before the sausage layer is cooked through.
- Seal the sausage layer fully: Gaps in the meat layer can split during frying, so smooth the sausage evenly around each egg before coating.
Make-ahead tips
- Prepare before frying: The eggs can be wrapped, coated and chilled briefly before frying, which also helps the crumb set firmly.
- Reheat safely: Reheat refrigerated Scotch eggs on a baking tray at 180°C (355°F) until piping hot throughout.

Instructions
- Bring a large pot of water to the boil. Lower in 4 eggs and boil for 6 minutes for a slightly soft centre, or 8 minutes for firmer yolks. Drain and cool immediately in cold water, then peel once cool enough to handle.
- In a mixing bowl, combine the pork sausage with the English mustard, Dijon mustard, black pepper and fine sea salt until evenly mixed. Divide into 4 equal portions. With damp hands, flatten each portion into a thin oval large enough to wrap an egg.
- Wrap each peeled egg in the sausage mixture, pressing and smoothing to fully seal with no gaps. Roll gently between your palms to neaten the shape. Place on a plate while you set up the coating.
- Put the plain flour in one bowl and the breadcrumbs in another. Beat the remaining egg in a third bowl. Coat each sausage-wrapped egg in flour, then egg, then breadcrumbs, pressing the crumbs on so they adhere well.
- Heat the sunflower oil in a saucepan to 170°C (340°F). Fry the Scotch eggs in batches for 6 to 8 minutes, turning, until deep golden and the sausage is cooked through. Lift out with a slotted spoon and drain briefly before serving warm, or cool for serving cold.
Recipe notes
Tips
- For the neatest coating, chill the breadcrumbed eggs for 10 minutes before frying so the crumbs set firmly.
- Keep the oil temperature steady at 170°C (340°F); if it is too hot the crumbs brown before the sausage cooks through.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, boil the eggs for 8 minutes so the yolks are fully set.
Substitutions
- Replace Dijon mustard with English mustard for a sharper, more traditional heat.
- Replace Breadcrumbs with panko breadcrumbs for a lighter, crunchier coating.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container. Eat cold, or reheat on a baking tray at 180°C (355°F) for 12 to 15 minutes until piping hot throughout.
