Pipián Rojo con Pollo (Mexican Chicken in Red Seed and Chilli Sauce)
Why this recipe works
- Layered seed-and-chilli flavour: Toasted pumpkin seeds and sesame give the sauce depth, while guajillo, ancho, cumin and cinnamon build warm savoury complexity.
- Thick, smooth sauce: Blending the toasted seeds with tomato and hot stock creates a naturally rich sauce that coats the chicken well without needing cream.
- Classic pipián method: Toasting the seeds before blending draws out their nutty flavour and gives the sauce its recognisable body.

Authenticity notes
- Seed-based sauce: Pipián is recognised for its ground seed base; here, pumpkin seeds and sesame create the sauce’s thick texture and nutty flavour.
- Red pipián style: This rojo version uses tomato and dried red chillies for colour and warmth, distinct from green pipián styles made with green ingredients.
- How to serve it: Warm corn tortillas, rice and lime are natural partners for scooping up the sauce and balancing its richness.
Adjust the heat
- For less heat: Reduce the chilli powders slightly and lean on the tomato, seeds and stock for body rather than extra spice.
- For more heat: Add a little extra chilli powder gradually, tasting as the sauce simmers so the heat stays balanced.
- Keep it rounded: A squeeze of lime at the table helps lift the sauce and keeps the chilli warmth from feeling heavy.
Texture tips
- Blend until very smooth: Give the sauce enough time in the blender so the seeds fully break down and the finished pipián feels cohesive rather than gritty.
- Thicken gently: Simmer the blended sauce uncovered until it coats the back of a spoon, stirring often so the seed-rich mixture does not catch.
- Keep the chicken tender: Use a gentle simmer rather than a hard boil; bone-in thighs stay juicier when cooked slowly in the stock and sauce.
Make-ahead tips
- Prepare ahead: The chicken and sauce can be cooked in advance and kept chilled, then reheated gently before serving.
- Reheat with care: Warm in a saucepan over low to medium heat with a splash of stock if the sauce has thickened too much.
- Freeze the sauced chicken: Freeze the chicken in its sauce, then defrost overnight in the fridge and reheat until piping hot throughout.

Ingredients
Instructions
- Thinly slice the onion and peel the garlic. Season the chicken thighs all over with the fine sea salt and black pepper.
- Heat the olive oil in a saucepan over medium heat, then add the onion and cook for 6 to 8 minutes until softened and lightly golden. Stir in the garlic for 1 minute until fragrant.
- Add the chicken thighs and pour in the chicken stock. Bring to a gentle simmer, then cover and cook for 25 to 30 minutes until the chicken is tender and cooked through.
- Meanwhile, set a frying pan over medium heat and toast the pumpkin seeds and sesame seeds, stirring often, for 3 to 5 minutes until fragrant and lightly coloured. Tip them straight into a blender to stop them catching.
- Cut the tomatoes into chunks and add to the blender with the guajillo chili powder, ancho chili powder, ground cumin and ground cinnamon. Ladle in about 300 ml of the hot chicken stock from the pan, then blend until very smooth.
- Pour the blended sauce back into the saucepan and stir well. Simmer uncovered for 10 to 12 minutes, stirring regularly, until thick enough to coat the back of a spoon; add a splash more stock if it becomes too thick.
- Warm the corn tortillas in a dry frying pan for 20 to 30 seconds per side, keeping them covered as you go. Cut the limes into wedges.
- Taste the pipián and adjust seasoning with a little more fine sea salt if needed. Serve the chicken hot with plenty of sauce, warm tortillas, and a squeeze of lime.

Serving suggestions
This recipe pairs well with:
Tips
- For the smoothest sauce, blend for a full minute, then let it sit for 1 minute to release air bubbles before pouring back into the pan.
- Keep the simmer gentle once the sauce is added so it thickens without catching; stir right into the corners of the pan.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink at the bone.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner version; simmer for 12 to 15 minutes, then finish in the sauce until just cooked through.
- Replace Pumpkin seeds with Shelled sunflower seeds for a similar nutty body.
- Replace Lime with Lemon for a slightly sharper citrus finish.
Storage
- Refrigerate up to 3 days
- Cool the chicken and sauce quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of chicken stock until piping hot; warm corn tortillas separately. Freeze the chicken in sauce for up to 2 months and defrost overnight in the fridge before reheating.
