English Trifle
Why this recipe works
- Distinct layers: Softened sponge, fruit, set custard and billowy cream create the spoonable contrast that defines a good trifle.
- Fruit balances richness: Raspberries and jam cut through the custard and cream, keeping the dessert bright rather than heavy.
- Improves as it chills: Resting in the fridge helps the sponge absorb flavour and allows the custard and cream layers to firm before serving.

Timing notes
- Chill before finishing: Let the custard layer become properly cold before adding the whipped cream so the topping keeps its shape.
- Best serving window: Serve well chilled, ideally within 24 hours, while the layers are still defined and the fruit tastes fresh.
Ingredient notes
- Use thick custard: A thick, chilled custard gives the trifle a clean central layer instead of sinking into the sponge.
- Soak the sponge gently: Drizzle the sherry gradually so the ladyfingers become fragrant and soft without collapsing.
- Fresh berries work best: Fresh raspberries hold their shape better than frozen berries, which can release liquid as the trifle chills.
Texture tips
- Avoid a waterlogged base: Moisten the sponge rather than saturating it; the jam, fruit and chilling time will soften it further.
- Keep the cream soft: Whip the cream only to soft peaks so it stays light and billowy rather than stiff or grainy.
Ingredient swaps
- Alcohol-free option: Replace the sherry with an alcohol-free soaking liquid such as fruit juice, adding it gradually so the sponge softens without becoming wet.
- Change the fruit layer: Strawberry jam and fresh strawberries give a sweeter, softer version while keeping the same layered structure.

Instructions
- Break the ladyfingers biscuits into rough pieces and scatter half into the base of a serving bowl. Drizzle over half the sherry, aiming to moisten the sponge without turning it soggy.
- Warm the raspberry jam briefly by stirring it in a bowl until loosened, then spoon half over the soaked sponge. Scatter over half the raspberries.
- Repeat the layers with the remaining ladyfingers biscuits, sherry, raspberry jam and raspberries. Press very gently so the layers sit neatly, but do not crush the fruit.
- Spoon the custard over the top and smooth it into an even layer, letting it settle into the gaps. Cover and chill until the custard layer feels set and cold.
- Whip the double cream with the caster sugar to soft peaks so it holds its shape but still looks billowy. Spoon or pipe the cream over the chilled custard.
- Chill the trifle for at least 45 minutes so the cream firms slightly and the flavours meld. Serve cold, scooping down through all the layers.
Recipe notes
Tips
- Use a thick, well-chilled custard so it sits in a clean layer rather than running into the sponge.
- When soaking the ladyfingers biscuits, drizzle the sherry gradually; you want them moist and fragrant, not collapsing.
- If serving to children or anyone avoiding alcohol, use less sherry and allow extra chilling time so the sponge still softens and the layers set.
Substitutions
- Replace Sherry with dry white wine for a lighter, less nutty soak.
- Replace Raspberry jam with Strawberry jam for a sweeter, softer berry flavour.
- Replace Raspberry with Strawberry for a milder fruit layer.
Storage
- Refrigerate up to 2 days
- Keep covered in the fridge and serve cold. The sponge will continue to soften over time, so it is best within 24 hours for the cleanest layers.
