Mexican Chicken Fajita Bowl
Why this recipe works
- Smoky, savoury base: Cumin, smoked paprika and mild chilli powder coat the chicken directly, so the seasoning browns with the meat rather than sitting only on the surface of the bowl.
- Good contrast: Tender chicken, peppers with a little bite, fluffy rice and creamy avocado give the bowl a more complete texture than a simple chicken-and-rice dish.
- Easy to adapt: The rice, chicken and vegetables form a flexible base that works with extra lime, different grains or a juicier cut of chicken if preferred.

Adjust the heat
- For less heat: Reduce the mild chilli powder and lean on the cumin and smoked paprika for flavour without extra warmth.
- For more heat: Use a hotter chilli powder or add a pinch of chilli flakes to the chicken seasoning before cooking.
Common mistakes
- Avoid crowding the chicken: Cook the chicken in a single layer so it sears rather than steams; use batches if your pan is small.
- Keep the pan hot enough: Medium-high heat helps the chicken and vegetables pick up colour while still staying tender.
- Drain the rice well: Letting the rice steam-dry under a lid keeps the bowl from becoming wet once the hot fajita filling is added.
Make-ahead tips
- Store the fresh toppings separately: Keep the avocado and lime separate from the cooked rice, chicken and peppers, then add them just before serving.
- Reheat gently: Warm the chicken, peppers and rice in a frying pan with a small splash of water until piping hot.
- Good for meal prep: The cooked rice and fajita filling can be chilled in airtight containers for up to three days.
Ingredient notes
- Choose firm-ripe avocado: A ripe but firm avocado slices cleanly and holds its shape against the warm chicken and peppers.
- Use long-grain rice: Long-grain white rice gives a light, separate texture that suits a bowl-style serving.
- Chicken thigh option: Boneless skinless chicken thighs can be used instead of breast for a juicier result; they need a little longer to cook through.

Ingredients
Instructions
- Cook the rice in a saucepan of lightly salted water for 12 minutes, or until tender. Drain well, cover, and set aside to steam-dry while you cook the fajita filling.
- Meanwhile, slice the chicken into thin strips and put in a bowl with the cumin, smoked paprika, mild chilli powder, 1 tbsp of the olive oil, and a pinch of salt. Toss well to coat.
- Halve and thinly slice the red onion, then deseed and thinly slice the red peppers. Halve the avocado and slice, then cut the lime into wedges.
- Heat the remaining 1 tbsp olive oil in a large frying pan over a medium-high heat. Add the chicken in a single layer and cook for 4 to 6 minutes, turning once, until lightly charred and cooked through.
- Add the red onion and red peppers to the pan and sauté for 5 to 7 minutes until softened but still with a little bite. Taste and season if needed, keeping the heat high enough to get a little colour on the vegetables.
- Divide the rice between bowls, then spoon over the hot chicken and peppers. Top with avocado and serve with lime wedges for squeezing over.
Recipe notes
Tips
- For the best fajita-style sear, let the pan get properly hot before adding the chicken and avoid moving it around too much for the first couple of minutes.
- If your pan starts to look dry when the peppers go in, add a small splash of water and scrape up any browned bits; it will coat the chicken and vegetables with extra flavour.
Substitutions
- Replace the chicken breast with chicken thighs boneless skinless for a juicier bowl; cook for an extra 2 to 3 minutes, until cooked through.
- Replace the long-grain white rice with brown-rice for a nuttier flavour, adjusting the cooking time according to the packet.
Storage
- Refrigerate up to 3 days
- Cool the chicken, peppers and rice quickly, then refrigerate in airtight containers. Reheat in a frying pan with a splash of water until piping hot; add the avocado and lime fresh when serving.
