Air Fryer Honey Garlic Chicken
Why this recipe works
- Crisp without deep-frying: The air fryer browns the chicken pieces quickly while keeping the method lighter and less messy than frying in oil.
- Balanced glaze: Honey brings sweetness, soy sauce adds savoury depth, and rice vinegar cuts through the richness so the sauce does not taste flat.
- Weeknight-friendly timing: The chicken cooks while the sauce simmers, keeping the overall workflow efficient and straightforward.

Texture tips
- Keep the chicken in one layer: Leave space around the pieces in the air fryer basket so they brown rather than steam. Cook in batches if needed.
- Glaze just before serving: Toss the chicken with the sauce at the end so the coating clings without softening the browned edges too much.
Common mistakes
- Do not boil the sauce hard: A gentle simmer keeps the honey glaze smooth and glossy; high heat can make it reduce too quickly and turn sticky.
- Add the cornflour slurry smoothly: Whisk the cornflour with water before adding it to the pan to avoid lumps in the finished sauce.
Ingredient swaps
- Use apple cider vinegar if needed: Apple cider vinegar can replace rice vinegar for a slightly fruitier tang while keeping the sauce balanced.
- Chicken breast works too: Boneless skinless chicken breast can be used, but reduce the cooking time and stop as soon as it is cooked through to keep it juicy.
Make-ahead tips
- Prepare the aromatics in advance: The garlic, ginger and spring onions can be prepped ahead so the sauce comes together quickly at cooking time.
- Reheat gently: Warm leftovers with a splash of water and gentle heat so the glaze loosens without over-reducing.

Instructions
- Cut the chicken thighs into bite-sized pieces and toss with 1 tsp sesame oil in a bowl. Preheat the air fryer to 200°C (390°F) for 3 minutes. Thinly slice the spring onions, keeping some green tops for the finish.
- Arrange the chicken in the air fryer basket in a single layer (cook in batches if needed). Air fry for 14 to 16 minutes, shaking or turning halfway, until browned and cooked through. Keep the cooked chicken warm while you finish the sauce.
- Meanwhile, finely grate the garlic and ginger. Add the honey, light soy sauce, rice vinegar, garlic, ginger and the remaining 1 tsp sesame oil to a saucepan and bring to a gentle simmer over a medium heat. Cook for 2 to 3 minutes, stirring, until the garlic and ginger smell fragrant.
- Whisk the cornflour with the water until smooth, then whisk it into the simmering sauce. Cook for 1 to 2 minutes until glossy and lightly thickened, taking care not to let it boil hard. The sauce should coat the back of a spoon.
- Add the hot chicken to the saucepan and toss to coat well. Simmer gently for 1 minute so the glaze clings to the chicken. Serve topped with the spring onions.
Recipe notes
Tips
- For the crispest chicken, avoid stacking in the air fryer; cook in batches and keep the first batch warm while the second cooks.
- If the sauce thickens too much as it cools, loosen it with a splash of water and warm it gently.
- Chicken should be cooked until piping hot throughout; if you have a thermometer, aim for 75°C (165°F) in the thickest piece.
Substitutions
- Replace rice vinegar with apple-cider-vinegar for a slightly fruitier tang.
- Replace chicken thighs with chicken-breast-boneless-skinless; reduce the air-fry time and cook just until cooked through to keep it juicy.
Storage
- Refrigerate up to 3 days
- Cool quickly and refrigerate in a sealed container. Reheat gently in a saucepan with a small splash of water until piping hot, or microwave in short bursts, stirring between, to avoid the sauce turning sticky and over-reducing.
