Chicken Teriyaki Avocado Poke Bowl
Why this recipe works
- Glossy teriyaki glaze: Soy sauce, mirin and brown sugar reduce quickly into a sweet-savoury coating that clings well to bite-size chicken pieces.
- Balanced textures: Warm chicken and fluffy rice are offset by cool cucumber, creamy avocado, crisp nori and sesame seeds.
- Fast bowl assembly: The chicken cooks while the rice steams, keeping the workflow efficient enough for a fresh lunch or weeknight meal.

Timing notes
- Let the rice steam: Keeping the rice covered off the heat helps the grains finish evenly and stay fluffy rather than wet.
- Serve once assembled: The bowl is best served straight away, while the chicken and rice are warm and the cucumber, avocado and nori still taste fresh.
Ingredient notes
- Choose firm-ripe avocado: Use avocado that yields slightly but still slices cleanly, so it holds its shape in the bowl.
- Mirin matters: Mirin brings gentle sweetness and gloss to the teriyaki-style glaze; if using a substitute, keep the flavour sweet rather than sharp.
Make-ahead tips
- Store components separately: Keep the rice and chicken in separate airtight containers, then add avocado, cucumber, spring onion, sesame and nori fresh.
- Reheat before topping: Warm the rice and chicken until piping hot, then assemble with the cool toppings just before serving.
Common mistakes
- Boiling the glaze too hard: A lively simmer is enough to make the sauce glossy; a hard boil can make the sugars catch before the chicken is coated.
- Skipping the rice rest: Fluffing the rice too soon can leave it unevenly cooked, so allow the covered resting time before dividing it between bowls.

Instructions
- Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Remove from the heat and leave, covered, for 10 minutes.
- Meanwhile, cut the chicken into bite-size pieces. Heat the sesame oil in a large frying pan over medium-high heat, add the chicken and cook for 6 to 8 minutes until golden and cooked through. Transfer to a plate.
- In the same pan, stir together the soy sauce, mirin and brown sugar and bring to a lively simmer. Bubble for 1 to 2 minutes until glossy and slightly thickened. Return the chicken to the pan and toss for 30 to 60 seconds until well coated.
- Thinly slice the cucumber and slice the avocado. Finely slice the spring onions and shred the nori into thin strips with scissors. Divide the rice between two bowls.
- Top each bowl with the teriyaki chicken, cucumber and avocado. Finish with spring onion, roasted sesame seeds and nori. Serve straight away while the chicken is warm and the rice is fluffy.

Tips
- Keep the sauce at a lively simmer rather than a hard boil so it turns glossy without catching.
- For best texture, let the rice steam off the heat, covered, before you fluff it into bowls.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the chicken is cooked until piping hot all the way through.
Substitutions
- Replace mirin with dry sherry for a similar sweetness and gentle warmth.
- Replace brown sugar with honey for a softer, rounder sweetness in the glaze.
Storage
- Refrigerate up to 2 days
- Store rice and chicken separately in airtight containers. Reheat the chicken and rice in the microwave until piping hot, then add avocado, cucumber, spring onion, sesame seeds and nori fresh to serve.
