Cajun Prawn Rice Bowl
Why this recipe works
- Fast weeknight method: The rice steams while the vegetables and prawns cook, keeping the full bowl achievable in under 30 minutes.
- Spice, sweetness and freshness: Cajun seasoning gives the prawns savoury heat, while sweetcorn, red pepper and lime add contrast.
- Cool creamy finish: A spoonful of soured cream softens the spice and brings the rice, prawns and vegetables together.

Adjust the heat
- For less heat: Use a milder Cajun seasoning or reduce the amount slightly, then finish with extra soured cream to soften the spice.
- For more heat: Choose a hotter Cajun blend or add a little chilli sauce at the table so each bowl can be adjusted individually.
- Keep it balanced: Add the lime right at the end; its acidity lifts the spice and stops the bowl tasting heavy.
Ingredient notes
- Check the Cajun seasoning: Cajun blends vary widely in salt and heat, so taste before adding extra salt or pepper.
- Use similar-sized prawns: Prawns of an even size cook more consistently and are easier to sear without overcooking.
Common mistakes
- Do not overcook the prawns: Take them off the heat as soon as they are pink, opaque and just firm; too long in the pan makes them rubbery.
- Give the prawns space: If the pan is too crowded, the prawns steam rather than sear, which dulls the seasoning and texture.
Make-ahead tips
- Prep before cooking: Slice the pepper, prepare the garlic and cut the lime in advance so the pan-cooking stage moves quickly.
- Keep the finish fresh: If storing leftovers, keep the soured cream and lime separate and add them only after reheating.
- Reheat gently: Warm the rice and vegetables until piping hot, then add the prawns just long enough to heat through.

Ingredients
Instructions
- Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water and fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Remove from the heat and leave, covered, for 5 minutes, then fluff with a fork.
- Meanwhile, deseed and slice the red pepper into thin strips. Finely grate or crush the garlic. Cut the lime into wedges.
- Heat 1 tbsp olive oil in a large frying pan over a medium-high heat. Add the red pepper and cook for 3 to 4 minutes until starting to soften, then stir in the sweetcorn and garlic for 1 minute until fragrant. Scrape the veg onto a plate.
- Add the remaining 1 tbsp olive oil to the pan and keep the heat medium-high. Toss the prawns with the Cajun seasoning, then pan-sear for 2 to 3 minutes, turning once, until pink and just cooked through. Season with a pinch of black pepper.
- Divide the rice between two bowls and spoon over the pepper and sweetcorn. Top with the Cajun prawns, add a dollop of sour cream, and finish with a generous squeeze of lime. Serve straight away.
Recipe notes
Tips
- For the juiciest prawns, keep the pan hot and cook them only until they turn pink and opaque; overcooking makes them rubbery.
- If you are cooking for anyone vulnerable, use pasteurised sour cream and make sure the prawns are cooked through with no translucent centres.
Substitutions
- Replace Sour cream with Greek yogurt for a lighter, tangier finish.
- Replace Red pepper with Yellow pepper for a sweeter flavour and similar texture.
- Replace Lime with Lemon if that is what you have; add it at the end to keep the flavour bright.
Storage
- Refrigerate up to 2 days
- Cool quickly and refrigerate in a sealed container. Reheat the rice and veg in a frying pan with a splash of water until piping hot, then add the prawns just to warm through; add the sour cream and lime after reheating.
