Spanish-Style Prawn Rice Bowl with Saffron Rice
Why this recipe works
- Fragrant savoury base: Saffron infuses the rice while garlic and smoked paprika add depth to the prawns.
- Bright finish: Lemon and fresh tomato lift the richness of the olive oil and seafood.
- Efficient timing: The pepper and prawns cook while the rice rests, keeping the whole meal comfortably under an hour.

Timing notes
- Let the rice stand: Keeping the rice covered off the heat helps the grains finish steaming and absorb the saffron aroma.
- Serve the prawns promptly: Prawns are best just cooked, while still juicy and tender, so assemble the bowls as soon as they turn pink and opaque.
Ingredient notes
- Use saffron sparingly: A small amount gives the rice its colour and floral aroma; too much can taste medicinal.
- Smoked paprika matters: Smoked paprika gives the dish its Spanish-style savoury depth, while sweet paprika makes a gentler, less smoky version.
- Choose raw peeled prawns: Raw prawns cook quickly in the garlic oil and take on more flavour than pre-cooked prawns.
Common mistakes
- Overcooking the prawns: Remove the prawns from the heat once they are pink and piping hot; longer cooking can make them firm and rubbery.
- Browning the garlic: Garlic can turn bitter quickly, so keep it moving and add the prawns as soon as it smells fragrant.
- Letting prawns steam: Pat very wet prawns dry before cooking so they sauté in the paprika oil rather than releasing excess liquid.
Serving ideas
- Add a simple green side: Serve with a crisp salad or garlicky greens to keep the meal fresh and balanced.
- Finish at the table: Extra lemon wedges and parsley let each bowl be adjusted for brightness and freshness.

Instructions
- Rinse the rice until the water runs mostly clear. Put it in a saucepan with 400 ml water and the saffron, bring to the boil, then cover and cook on a low heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, cut the red pepper into thin strips and dice the tomatoes. Finely slice the garlic, and roughly chop the parsley. Cut the lemon in half.
- Heat 1 tbsp of the olive oil in a large frying pan over a medium-high heat. Add the red pepper and cook for 6 to 8 minutes until softened and lightly blistered. Stir in the tomatoes and cook for 2 minutes until just warmed through, then scrape into a bowl.
- Return the pan to a medium heat and add 1 tbsp of the olive oil. Add the garlic and smoked paprika and cook for 30 seconds until fragrant. Add the prawns and cook for 2 to 4 minutes, turning, until pink and just cooked through.
- Fluff the saffron rice and divide between two bowls. Top with the garlic prawns and the pepper and tomato mixture. Squeeze over the lemon, drizzle with the remaining 1 tbsp olive oil, and finish with the parsley.
Recipe notes
Tips
- If your prawns are very wet, pat them dry before cooking so they sauté rather than steam.
- Keep the garlic moving in the pan and add the prawns promptly so it does not brown and turn bitter.
- Seafood should be cooked until piping hot; if serving anyone vulnerable, make sure the prawns are fully cooked through.
Substitutions
- Replace Long-grain white rice with Basmati rice for a more fragrant bowl; cook according to the packet, still infusing with Dried saffron threads.
- Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
- Replace Fresh parsley with Fresh basil for a softer, more aromatic finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat the rice and topping separately in a frying pan with a small splash of water until piping hot, and add Lemon and Fresh parsley after reheating.
