Madeleines (French Shell Cakes with Lemon and Vanilla)
Why this recipe works
- Classic madeleine bump: Briefly chilling the batter before baking helps create the temperature contrast that gives madeleines their recognisable domed centre.
- Tender centre, golden edges: A hot oven sets the outside quickly, giving lightly crisp edges while keeping the middle soft and sponge-like.
- Fresh citrus balance: Lemon zest cuts through the richness of the melted butter, keeping the cakes delicate rather than heavy.

Timing notes
- Chill before baking: The short chill is important for shape and lift; skipping it can make the madeleines flatter.
- Best served fresh: Madeleines have their finest texture shortly after baking, when the edges are still lightly crisp and the crumb is tender.
Texture tips
- Fold gently after adding flour: Once the dry ingredients go in, mix only until combined to avoid a dense or chewy crumb.
- Use a fully preheated oven: Baking at 200°C (390°F) helps the batter rise quickly and gives the cakes their lightly golden shell.
Ingredient notes
- Use unwaxed citrus: Because the zest is used directly in the batter, an unwaxed lemon gives a cleaner citrus flavour.
- Let the butter cool slightly: Warm, not hot, melted butter folds into the batter smoothly without deflating the eggs.
Make-ahead tips
- Freeze once baked: Freeze cooled madeleines in a sealed container, then defrost at room temperature before refreshing in a 160°C (320°F) oven.
- Plan around serving: For the lightest texture, bake them close to serving time rather than holding them for several days.

Instructions
- Melt the butter in a small saucepan over low heat, then take off the heat and leave to cool until just warm. Finely zest the lemon and set the zest aside.
- In a mixing bowl, whisk the eggs, caster sugar, lemon zest and vanilla until pale and slightly thickened, about 2 minutes. This helps give the cakes a light, sponge-like crumb.
- Whisk the flour, baking powder and salt together, then fold into the egg mixture just until no dry flour remains. Pour in the warm melted butter and fold gently until the batter is smooth and glossy.
- Cover and chill the batter for 20 minutes to help create the characteristic bump. Meanwhile, heat the oven to 200°C (390°F) and place a 12-hole madeleine tray or muffin tin in the fridge to chill.
- Spoon the batter into the chilled moulds, filling each about three-quarters full. Bake for 9 to 11 minutes until the edges are lightly golden and the centres spring back when touched.
- Leave the madeleines to cool in the tin for 2 minutes, then turn out onto a rack to cool slightly. Serve warm or at room temperature for the best texture.

Tips
- For the best bump, make sure the batter is properly chilled and the oven is fully preheated before baking.
- Do not overmix once the flour goes in; folding gently keeps the crumb tender.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with a lion mark or another recognised food safety standard.
Substitutions
- Replace Lemon with Orange for a softer citrus flavour.
- Replace Vanilla extract with Madagascar vanilla paste for a more intense vanilla aroma.
Storage
- Refrigerate up to 2 days
- Store in an airtight container at room temperature for up to 1 day, or in the fridge for up to 2 days. Freeze in a sealed container for up to 1 month; defrost at room temperature, then warm in a 160°C (320°F) oven for 3 to 4 minutes to refresh.
