Discada Norteña (Northern Mexican Mixed Meat Skillet)
Why this recipe works
- Layered savoury depth: Bacon fat forms the base, then pork, beef, aromatics, tomato and beer build a rich, meaty sauce in stages.
- Built in one pan: Browning the meats and simmering the sauce in the same skillet keeps the cooking efficient and captures the flavour from the pan.
- Made for sharing: Warm tortillas, lime wedges and juicy meat make it easy to serve straight from the pan for a relaxed dinner.

Authenticity notes
- Northern Mexican style: Discada is closely associated with northern Mexican cooking, where mixed meats are cooked together and served with tortillas.
- Skillet adaptation: Traditional versions are often cooked on a large disc-shaped griddle; a wide frying pan or cast-iron pan gives a practical home-kitchen equivalent.
Adjust the heat
- For less heat: Remove the jalapeño seeds and membrane before chopping, or use a smaller amount of pepper.
- For more heat: Keep the jalapeño seeds in, or add extra fresh chilli at the same stage as the onion.
- Balance at the table: Lime juice sharpens the rich meat and helps keep the heat from tasting heavy.
Common mistakes
- Crowding the meat: If the pan is too full, the meat steams instead of browning. Use a wide pan and let the pieces sit briefly before stirring.
- Heat too low for browning: Increase the heat when the pork and beef go in so they colour properly before the tomatoes and beer are added.
- Letting the sauce reduce too far: Keep the simmer lively but controlled, and add a small splash of water if the pan looks dry before the pork is tender.
Make-ahead tips
- Prep the meat and aromatics ahead: The bacon, pork, beef, onion, jalapeño and garlic can be cut in advance and kept chilled until cooking.
- Reheat gently: Warm the discada in a frying pan over medium-low heat with a small splash of water until piping hot.
- Freeze the filling only: Freeze the cooked discada without the tortillas, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Cut the bacon into small pieces. Dice the onion, finely chop the jalapeno pepper (remove the seeds for less heat), and finely chop the garlic. Cut the pork shoulder and beef steak into small, bite-sized pieces.
- Set a large frying pan over medium heat and cook the bacon for 6 to 8 minutes until the fat renders and the bacon is starting to crisp. Add the onion and jalapeno pepper and cook for 4 to 5 minutes until softened. Stir in the garlic for 30 seconds until fragrant.
- Increase the heat to medium-high and add the pork shoulder, spreading it out so it browns. Cook for 6 to 8 minutes, turning occasionally, until well coloured. Add the beef steak and cook for 4 to 6 minutes until browned.
- Chop the tomatoes and stir them into the pan, scraping up any browned bits. Pour in the lager beer and bring to a lively simmer. Reduce to medium-low and simmer for 8 to 10 minutes until the tomatoes break down and the sauce looks glossy and rich.
- Warm the corn tortillas in a dry pan or directly over a low flame, turning until pliable. Cut the limes into wedges. Serve the discada with the warm tortillas and plenty of lime to squeeze over.
Recipe notes
Tips
- For the best texture, keep the meat pieces small and let them sit undisturbed for a minute or two in the pan so they brown properly before stirring.
- If the sauce reduces too quickly, add a small splash of water and keep simmering until the pork is tender and the sauce is rich.
- Alcohol does not fully cook off; if serving children or anyone avoiding alcohol, see the substitution for lager beer.
Substitutions
- Replace Lager beer with Water for a non-alcoholic version; simmer a little longer to concentrate the tomato flavour.
- Replace Pork shoulder with Beef steak for an all-beef discada; keep the pieces small so they stay tender.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container for up to 3 days. Reheat in a frying pan over medium-low heat with a splash of water until piping hot; warm the corn tortillas separately. Freeze the discada (not the tortillas) for up to 2 months and defrost overnight in the fridge before reheating.
