Tarte Flambée Alsacienne (Alsatian Cream and Bacon Flatbread)

Known in Alsace as flammekueche, tarte flambée is a wafer-thin savoury flatbread with a creamy topping, sweet softened onion and salty bacon. It is typically served straight from a very hot oven, cut into pieces for sharing while the base is still crisp and lightly blistered. This version uses a simple yeasted dough rolled extremely thin, then topped with crème fraîche, rendered streaky bacon, onions and black pepper. The pleasure of the dish is in its directness: a crackly edge, a soft creamy centre, gentle onion sweetness and smoky savoury richness, all best enjoyed hot rather than held for later.

Why this recipe works

  • Crisp, blistered base: Rolling the dough very thinly and baking it on a preheated tray gives the flatbread its characteristic crisp edges and light blistering.
  • Simple savoury depth: Crème fraîche brings tangy richness, while rendered bacon, softened onion and black pepper add smoke, sweetness and seasoning.
  • Classic topping balance: The restrained topping keeps the base light and crisp rather than heavy, which is key to a recognisable tarte flambée.

Authenticity notes

  • Alsatian style: Tarte flambée, also known as flammekueche, is associated with Alsace and is defined by its thin base, creamy topping, onions and bacon.
  • Thin rather than bready: The dough should be rolled much thinner than pizza dough, giving a crisp, crackly finish rather than a soft, risen crust.

Texture tips

  • Roll it very thin: Aim for an even, wafer-thin base so it cooks quickly before the crème fraîche topping makes the centre too soft.
  • Use a properly hot tray: Heating the tray in the oven helps the underside start crisping as soon as the flatbread is loaded.
  • Cool the topping briefly: Let the onions and bacon cool slightly before spreading them over the dough so the crème fraîche stays thick and the base is easier to handle.

Make-ahead tips

  • Best served immediately: Tarte flambée is at its best straight from the oven, while the edges are crisp and the topping is still hot.
  • Reheat on a hot tray: Reheat leftovers on a hot baking tray at 220°C (430°F) until crisp again and piping hot.

Serving ideas

  • Add a sharp salad: Serve with a lightly dressed green salad to cut through the richness of the crème fraîche and bacon.
  • Pair with dry white wine: A crisp, dry white wine works well with the smoky bacon and tangy cream topping.
  • Slice for sharing: Cut into strips or rough squares while hot and serve as a casual starter, snack or light meal.

  1. Put the oven on to 250°C (480°F) and set a baking tray inside to heat up. In a mixing bowl, stir together the flour, instant yeast and fine sea salt. Add the olive oil and lukewarm water, then mix to a shaggy dough.
  2. Knead the dough on a lightly floured surface for 6 to 8 minutes until smooth and elastic. Return it to the bowl, cover, and leave to rise until slightly puffy (it will not necessarily double).
  3. Meanwhile, thinly slice the onion. Cut the streaky bacon into thin strips, then fry in a pan over medium heat for 3 to 4 minutes until it starts to render and lightly colour. Tip onto a plate, leaving a little fat in the pan.
  4. Add the onion to the pan and cook over medium-low heat for 6 to 8 minutes until softened and just starting to turn golden. Season with a pinch of the black pepper, then take off the heat to cool slightly.
  5. Divide the dough into 2 pieces. On a floured surface, roll each piece very thinly into an oval or rectangle, aiming for about 2 to 3 mm thick. Spread the crème fraiche over each base, leaving a small border.
  6. Scatter the onions and bacon over the top, then finish with the remaining black pepper. Carefully slide one flatbread onto the hot tray and bake for 7 to 9 minutes until blistered with crisp edges. Repeat with the second flatbread.
  7. Serve immediately while hot, cut into pieces for sharing. If needed, rest the baked flatbread for 1 minute before slicing so the topping settles.

Recipe notes

Tips

  • Roll the dough as thinly as you can; the thinner it is, the more classic the crisp, blistered finish.
  • For the best lift and blistering, keep the baking tray in the oven while it heats, then work quickly when loading the flatbread.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the bacon is cooked through and the flatbread is piping hot before serving.

Substitutions

  • Replace Crème fraiche with Greek yogurt for a lighter, tangier topping (it will brown a little less).
  • Replace Extra virgin olive oil with vegetable oil for a more neutral-flavoured dough.
  • Replace Streaky bacon with back-bacon for a leaner topping.

Storage

  • Refrigerate up to 2 days
  • Best eaten straight away. Refrigerate leftovers in a sealed container and reheat on a hot baking tray at 220°C (430°F) for 5 to 7 minutes until crisp and piping hot.
