Herb-Crusted Salmon with Puy Lentils

Herb-crusted salmon with Puy lentils brings together crisp, aromatic breadcrumbs, tender fish and a warm lentil base with a distinctly French feel. Puy lentils are prized for holding their shape as they simmer, giving the dish a firm, earthy texture rather than a soft purée. Shallot, carrot, celery and garlic add savoury depth, while Dijon mustard and lemon sharpen the finish. The salmon is baked under a parsley, dill and panko crust, creating a light crunch that works well against the nutty lentils. It is a complete dinner in one bowl: satisfying, fresh-tasting and polished enough for guests without being fussy.

Why this recipe works

  • Crisp topping, tender fish: Panko and herbs create a light crust that contrasts well with the soft, flaky salmon.
  • Bright finish: Dijon mustard and lemon sharpen the earthy lentils and keep the dish from feeling heavy.
  • Simple savoury base: Shallot, carrot, celery and garlic give the lentils gentle depth before the final seasoning is added.

Ingredient notes

  • Choose Puy lentils for texture: Puy lentils are ideal here because they stay intact when simmered, giving the base a firm, satisfying bite rather than turning soft or mushy.
  • Use fresh herbs for the crust: Fresh parsley and dill give the topping a cleaner, brighter flavour than dried herbs, which can taste dusty in a quick breadcrumb crust.
  • Add lemon to taste: Stir in lemon gradually at the end so the lentils taste lively without overwhelming the mustard and herbs.

Texture tips

  • Keep the crust light: Press the breadcrumb mixture firmly onto the salmon, then bake soon after assembling so the crumbs stay dry enough to crisp.
  • Watch the salmon closely: Salmon can move from just cooked to dry quickly, so check it near the end of the baking time and use the grill only briefly if adding extra colour.
  • Keep the lentils intact: Simmer gently rather than boiling hard, and stop cooking once the lentils are tender but still holding their shape.

Make-ahead tips

  • Cook the lentils ahead: The lentil base can be made in advance and reheated gently with a splash of water before serving.
  • Store salmon and lentils separately: Keeping the fish apart from the lentils helps preserve the breadcrumb crust and makes reheating more controlled.
  • Reheat for better texture: Warm the lentils in a saucepan and reheat the salmon in a 180°C (355°F) oven until piping hot to help the crust stay crisp.

Serving ideas

  • Serve with greens: A simple green salad, steamed green beans or wilted spinach works well alongside the lentils and salmon.
  • Wine pairing: A crisp white wine such as Sauvignon Blanc or unoaked Chardonnay suits the lemon, herbs and Dijon.
  • Finish with freshness: Extra dill, parsley or a final squeeze of lemon gives the finished dish a cleaner, brighter finish.

  1. Heat the oven to 200°C (400°F). Finely chop the shallot, carrot and celery, and finely chop or crush the garlic.
  2. Warm 1 tbsp of the extra virgin olive oil in a saucepan over a medium heat. Add the shallot, carrot and celery with a pinch of the fine sea salt and cook for 6 to 8 minutes until softened, then stir in the garlic for 30 seconds.
  3. Stir in the puy lentils, then add 600 ml water and bring to the boil. Reduce to a gentle simmer and cook for 18 to 22 minutes until the lentils are tender but still holding their shape; add a splash more water if the pan looks dry.
  4. Meanwhile, line a baking tray and set the salmon on it. In a bowl, mix the panko breadcrumbs with the remaining 1 tbsp extra virgin olive oil, the fresh parsley, the fresh dill, a pinch of fine sea salt and black pepper, then press the mixture on top of the salmon.
  5. Bake for 10 to 12 minutes until the salmon is just cooked through and the crust is golden. If you like, give it 1 to 2 minutes under a hot grill at the end to deepen the colour, watching closely.
  6. Take the lentils off the heat and stir in the Dijon mustard. Finely grate in a little lemon zest, then squeeze in lemon juice to taste; season with the remaining fine sea salt and black pepper.
  7. Spoon the lentils into warm bowls and sit the salmon on top. Finish with a small drizzle of extra virgin olive oil and a final squeeze of lemon, if you like.

Recipe notes

Tips

  • For a crisp crust, press the breadcrumb mixture firmly onto the salmon and avoid letting it sit too long before baking.
  • If cooking for someone pregnant, elderly, or immunocompromised, bake the salmon until it is fully cooked through and piping hot.

Substitutions

  • Replace Fresh dill with extra Fresh parsley for a more classic parsley-forward crust.
  • Replace Panko breadcrumbs with Breadcrumbs for a finer, more compact crust.
  • Replace Dijon mustard with Whole-grain mustard for a coarser texture and gentler heat.

Storage

  • Refrigerate up to 2 days
  • Cool, then refrigerate the salmon and lentils in separate airtight containers. Reheat the lentils gently in a saucepan with a splash of water; warm the salmon in a 180°C (355°F) oven until piping hot to help keep the crust crisp.
