Provençal Chicken Bowl with Courgette and Olives

A Provençal-style chicken bowl takes the familiar southern French flavours of olive oil, herbs, garlic, tomatoes and olives and turns them into a practical one-bowl lunch. Bone-in chicken thighs roast until the skin is golden and savoury, while courgette softens in the pan with cherry tomatoes that just begin to burst. Black olives add depth, basil keeps the finish fresh, and lemon sharpens the richness of the chicken. It is simple enough for everyday cooking but has enough colour, aroma and texture to feel generous and complete.

Why this recipe works

  • Layered Mediterranean flavour: Herbes de Provence season the roasted chicken, while garlic, tomatoes, olives, basil and lemon add savoury depth, freshness and acidity.
  • Golden chicken skin: Patting the thighs dry and roasting them skin-side up helps the skin brown properly while the bone-in meat stays juicy.
  • Straightforward cooking: The chicken roasts separately while the vegetables cook quickly in a pan, keeping the method simple and easy to manage.

Ingredient notes

  • Herbes de Provence: This dried herb blend gives the dish its Provençal character; it typically brings thyme, rosemary, savoury and other woody herb notes.
  • Choose good olives: Black pitted olives add saltiness and depth, so use ones you enjoy eating rather than very bland varieties.
  • Add basil and lemon at the end: Fresh basil and lemon are most effective off the heat, where they keep their bright flavour rather than turning muted.

Texture tips

  • For better chicken skin: Dry the chicken well before seasoning and roast it skin-side up so moisture does not stop the skin from browning.
  • Brown the courgette first: Let the courgette soften and take on a little colour before adding the tomatoes, which release moisture as they cook.

Make-ahead tips

  • Season ahead: The chicken can be rubbed with olive oil, herbs and seasoning up to 12 hours ahead, then kept covered in the fridge until roasting.
  • Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, or use a frying pan with a splash of water to stop the vegetables catching.
  • Keep the fresh finish separate: If storing leftovers, add the basil and lemon after reheating so the final bowl tastes fresh rather than flat.

  1. Heat the oven to 220°C (430°F). Pat the chicken dry, then rub with 1 tbsp of the extra virgin olive oil, the herbes de Provence, fine sea salt and black pepper. Arrange on a baking tray, skin-side up.
  2. Roast for 30 to 35 minutes, until the skin is deeply golden and the juices run clear. Rest the chicken for 5 minutes while you cook the vegetables.
  3. Meanwhile, cut the courgettes into bite-size pieces and thinly slice the garlic. Warm the remaining 1 tbsp olive oil in a large frying pan over a medium heat, then cook the courgette with a pinch of the salt for 6 to 8 minutes until tender and lightly browned. Add the garlic and cook for 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook for 3 to 5 minutes until they soften and start to burst. Stir in the black pitted olives and warm through for 1 minute. Take off the heat, tear in most of the fresh basil, then squeeze over half the lemon.
  5. Divide the warm courgette, tomato and olive mixture between two bowls. Top with the roasted chicken and finish with the remaining basil and a final squeeze of lemon to taste. Serve straight away.

Recipe notes

Tips

  • For extra flavour, rub the chicken with the seasoning and olive oil up to 12 hours ahead, then keep covered in the fridge and roast when ready.
  • If the pan looks dry while cooking the courgette, add a small splash of water to help it soften without adding more oil.
  • Food safety: make sure the chicken is cooked through before serving, especially for children, older adults, and anyone who is pregnant or immunocompromised.

Substitutions

  • Replace Chicken thighs with Chicken breast boneless skinless; roast for 18 to 22 minutes, until cooked through.
  • Replace Fresh basil with Fresh thyme for a more woodsy, Provençal finish.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate in a sealed container. Reheat the chicken and vegetables in a 180°C (355°F) oven until piping hot, or warm gently in a frying pan with a splash of water; add the lemon and basil after reheating.
