Spaghetti alla Puttanesca (Tomato, Olive and Anchovy Pasta)

Few pasta sauces deliver as much character in so little time as puttanesca. It is an Italian tomato-based pasta sauce defined by anchovies melted into olive oil, briny olives, capers, garlic and a little chilli, giving the pasta a savoury, salty and gently sharp edge without needing long cooking. Tossed with spaghetti, the sauce should be glossy rather than heavy, clinging to the strands with help from reserved pasta water. It is a practical dinner for busy evenings, but distinctive enough to feel more deliberate than a basic tomato pasta.

Why this recipe works

  • Deep savoury base: Anchovies dissolve into the olive oil, seasoning the sauce with umami without dominating the dish.
  • Sharp, salty balance: Tomato passata brings acidity, while capers and olives add briny contrast and keep the sauce lively.
  • Fast weeknight method: The sauce simmers while the spaghetti cooks, making the whole dish practical for a quick dinner.

Adjust the heat

  • For gentler heat: Reduce the chilli flakes or use a little hot paprika for warmth without a sharp kick.
  • For more heat: Increase the chilli flakes slightly, adding them with the garlic so their flavour infuses the oil.

Ingredient notes

  • Season carefully: Anchovies, capers and olives are already salty, so taste the sauce before adding more salt.
  • Olive choice matters: Kalamata olives give a bold, fruity flavour; milder black olives make the sauce softer and less assertive.
  • Let the anchovies melt: Stir the anchovies into the warm oil until they break down, which helps them season the whole sauce evenly.

Common mistakes

  • Avoid browning the garlic: Keep the heat gentle when frying the garlic; browned garlic can make the sauce taste bitter.
  • Do not let the sauce dry out: Use reserved pasta water gradually to loosen the sauce until it coats the spaghetti in a glossy layer.
  • Keep the pasta al dente: Drain the spaghetti while it still has bite, as it will continue to absorb sauce when tossed in the pan.

Timing notes

  • Cook sauce and pasta together: Start the sauce while the spaghetti boils so everything is ready to toss at the same time.
  • Serve straight away: Puttanesca is at its best just after tossing, while the pasta is hot and the sauce still clings loosely.

  1. Bring a large pot of water to the boil and season it with most of the fine sea salt. Add the spaghetti and cook until al dente. Before draining, reserve about 150 ml of the pasta water.
  2. Meanwhile, warm the extra virgin olive oil in a large frying pan over a low to medium heat. Thinly slice the garlic, add it with the chilli flakes, and cook for 30 to 60 seconds until fragrant but not coloured. Add the anchovy fillets and stir until they melt into the oil.
  3. Pour in the tomato passata, then add the capers and olives. Simmer gently for 8 to 10 minutes until slightly thickened, stirring occasionally. Season with black pepper and only a pinch more salt if needed, as the anchovies, capers and olives are already salty.
  4. Add the drained spaghetti to the pan and toss well. Splash in a little reserved pasta water, a tablespoon at a time, until the sauce coats the pasta in a glossy layer. Take off the heat, stir through the fresh parsley, and serve straight away.

Recipe notes

Tips

  • Keep the heat low when frying the garlic so it turns fragrant without browning, which can make the sauce taste bitter.
  • If the sauce tightens up before serving, loosen it with a final splash of reserved pasta water rather than extra oil.

Substitutions

  • Replace black Kalamata pitted olives with black pitted olives for a milder olive flavour.
  • Replace chili flakes with a smaller amount of hot paprika for gentler heat and a rounder flavour.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container. Reheat in a frying pan over a low heat with a splash of water until piping hot, tossing to re-coat the pasta.
