Pasta Amalfitana (Tomato and Mozzarella Pasta)

Pasta Amalfitana is a fresh, unfussy Italian tomato pasta where ripe tomatoes, garlic, basil and extra virgin olive oil do most of the work. Rather than a heavy long-cooked sauce, the tomatoes are simmered briefly until glossy, then tossed with spaghetti so the sauce clings lightly to each strand. Torn mozzarella is added off the heat, softening into the warm pasta without disappearing completely, which gives the dish its creamy, milky finish. Bright, herby and quick enough for a weeknight, it is best served straight away while the mozzarella is still tender and melty.

Why this recipe works

  • Fast weeknight cooking: The sauce simmers while the spaghetti cooks, keeping the whole dish comfortably under 30 minutes.
  • Simple ingredients, clear flavour: Garlic, ripe tomato, tomato purée and basil build a fresh, savoury sauce without needing a long cook.
  • Naturally creamy finish: Reserved pasta water helps the sauce coat the spaghetti, while mozzarella softens into the hot tomatoes off the heat.

Ingredient notes

  • Use ripe tomatoes: Ripe tomatoes give the sauce better sweetness and balance; underripe tomatoes can make the finished dish taste sharper.
  • Choose good mozzarella: A soft mozzarella gives the best creamy, torn texture. Add it off the heat so it melts gently rather than turning rubbery.
  • Fresh basil matters: Fresh basil brings the bright herbal note this pasta needs. Add most of it near the end to keep the flavour clean.

Texture tips

  • Loosen the sauce gradually: Add reserved pasta water a little at a time while tossing the spaghetti, stopping when the sauce lightly coats the strands.
  • Keep the cheese off the heat: Tear the mozzarella over the pasta after removing the pan from the hob, then let the residual heat soften it.

Common mistakes

  • Do not brown the garlic: Cook the garlic gently until fragrant only; browned garlic can make the tomato sauce taste bitter.
  • Avoid a dry sauce: If the sauce tightens as the pasta is tossed, use a splash of pasta water to bring back a glossy coating.

Timing notes

  • Best served immediately: This pasta is at its best as soon as the mozzarella has softened and the basil is still fresh.

  1. Bring a large pot of water to the boil and season it well with some of the fine sea salt. Add the spaghetti and cook until al dente, according to the packet timings. Scoop out 150 ml of the pasta water, then drain.
  2. Meanwhile, heat the extra virgin olive oil in a saucepan over a low to medium heat. Thinly slice the garlic and cook for 30 to 60 seconds until fragrant, without letting it colour. Chop the tomatoes and add them to the pan with the tomato purée, black pepper, and the remaining fine sea salt.
  3. Simmer the sauce gently for 6 to 8 minutes, stirring occasionally, until the tomatoes soften and the sauce looks glossy. If it seems dry, loosen with a splash of the reserved pasta water. Tear most of the basil into the sauce, reserving a few leaves to finish.
  4. Add the drained spaghetti to the sauce and toss over a low heat for 1 to 2 minutes, adding a little more pasta water as needed so it coats the strands. Take the pan off the heat. Tear the mozzarella over the hot pasta and leave for 1 minute so it softens into the tomatoes, then scatter over the reserved basil and serve straight away.

Recipe notes

Tips

  • Keep the heat low when cooking the garlic; if it browns, the sauce can taste bitter.
  • Use ripe tomatoes for the sweetest, most balanced sauce, and add reserved pasta water a little at a time for a silky finish.

Substitutions

  • Replace spaghetti with linguine for a similar, classic texture.
  • Replace mozzarella with fresh mozzarella for a softer, creamier melt.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat gently in a saucepan with a splash of water until piping hot; the mozzarella will melt further, so add a few torn basil leaves after reheating if you have any.
