Mostaccioli (Italian Spiced Christmas Biscuits with Chocolate Glaze)

Italian mostaccioli sit between a biscuit and a small spiced cake: firm enough to hold their shape, but tender when baked just until set. Traditionally associated with Christmas baking, they bring together honey, cocoa, cinnamon, cloves and orange zest for a dark, aromatic sweetness that becomes rounder after resting. The chocolate glaze gives them their recognisable finish, adding a glossy snap and deeper cocoa note. They keep well, travel neatly and suit a festive biscuit tin, coffee table or after-dinner plate.

Why this recipe works

  • Layered festive flavour: Cocoa, honey, cinnamon, cloves and orange zest create depth without relying on a long ingredient list.
  • Improves after resting: The biscuits keep well, and the spice and honey flavours become more rounded after 24 hours.
  • Rich but not cloying: A dark chocolate glaze balances the sweetness of the honeyed biscuit dough.

Timing notes

  • Cool before glazing: Let the biscuits cool completely before dipping, otherwise the chocolate glaze may slide off or set unevenly.
  • Best after a day: The texture firms and the spice flavour deepens after 24 hours, making these well suited to advance baking.

Texture tips

  • Keep them tender: Remove the biscuits when they are just firm and lightly puffed; they will continue to set as they cool.
  • Shape evenly: Flatten each piece to a similar thickness so the batch bakes at the same rate and avoids hard edges.

Ingredient notes

  • Use cloves carefully: Ground cloves are powerful, so they give the biscuits their recognisable warmth without needing much.
  • Choose good dark chocolate: The glaze is simple, so a dark baking chocolate with a clean flavour gives the best finish.

Make-ahead tips

  • Bake ahead: Store the glazed biscuits in an airtight container at cool room temperature; they are well suited to festive baking in advance.
  • Freezer option: Freeze in a sealed container, then thaw at room temperature before serving.

  1. Heat the oven to 180°C (355°F) and line a baking tray with a baking mat. In a mixing bowl, whisk together the flour, cocoa, baking powder, cinnamon, cloves, dried orange zest and salt.
  2. In a second bowl, beat the butter and caster sugar until smooth and slightly lighter. Beat in the honey, then the egg, until fully combined.
  3. Add the dry ingredients to the honey mixture and mix until a firm dough forms. If it feels sticky, let it stand for 5 minutes so the flour hydrates.
  4. Divide the dough into 18 pieces and roll each into a short log, then gently flatten to about 1 cm thick. Arrange on the tray with a little space between them.
  5. Bake for 10 to 12 minutes, until just firm to the touch and lightly puffed; they should not be hard. Cool on the tray for 5 minutes, then transfer to a rack to cool completely.
  6. For the glaze, melt the dark chocolate gently in a saucepan over a low heat, stirring often. Stir in the milk a little at a time until glossy and thick but spreadable.
  7. Dip the tops of the cooled cookies into the chocolate glaze, letting the excess drip back into the pan. Set the cookies back on the rack and leave at room temperature until the glaze is set.

Recipe notes

Tips

  • For neat shaping, lightly dampen your hands when rolling the dough, then flatten each piece evenly so they bake at the same rate.
  • Do not overbake: take them out when they are just firm, as they continue to set as they cool.
  • If serving to vulnerable groups, use a pasteurised egg, as the dough contains raw egg before baking.

Substitutions

  • Replace Honey with Maple syrup for a slightly lighter, less floral sweetness.
  • Replace Whole milk with Cream for a richer, softer-set chocolate glaze.
  • Replace Ground cloves with Allspice for a rounder, less sharp spice note.

Storage

  • Refrigerate up to 7 days
  • Store in an airtight container at cool room temperature for up to 7 days; the flavour improves after 24 hours. Freeze in a sealed container for up to 2 months and thaw at room temperature before serving.
