Sonhos de Natal (Christmas Doughnuts)
Why this recipe works
- Crisp outside, tender centre: Dropping a thick batter into hot oil creates puffed doughnuts with craggy edges and a soft interior.
- Simple festive flavour: Butter, vanilla and cinnamon sugar give the doughnuts warmth and sweetness without making the batter heavy.
- Classic frying method: Small spoonfuls fry quickly and evenly, which helps the sonhos puff properly and stay light.

Timing notes
- Best served warm: The texture is at its lightest just after frying, especially once the cinnamon sugar has been added.
- Same-day sweet: Sonhos lose crispness as they sit, so they are best made close to serving time.
Common mistakes
- Watch the oil temperature: Keep the oil close to 175°C (350°F); cooler oil can make the doughnuts greasy, while hotter oil may brown the outside before the centre cooks.
- Do not overwork the batter: Whisk only until smooth once the dry ingredients are added, as overmixing can make the doughnuts dense.
- Fry in batches: Adding too many spoonfuls at once lowers the oil temperature and makes it harder for the sonhos to puff evenly.
Authenticity notes
- Portuguese Christmas sweet: Sonhos are commonly associated with Portuguese Christmas tables, where fried sweets coated in sugar and cinnamon are served alongside other festive pastries.
- Irregular shapes are expected: These are spoon-dropped rather than cut or shaped, so their uneven, puffed appearance is part of their character.

Instructions
- In a shallow bowl, mix 80 g of the caster sugar with the ground cinnamon and set aside for coating. In a separate mixing bowl, whisk together the plain flour, baking powder and fine sea salt.
- In another bowl, whisk the eggs with the remaining 40 g caster sugar and the vanilla extract until slightly foamy. Warm the whole milk with the unsalted butter in a saucepan over low heat just until the butter melts, then take off the heat and let it cool for 2 minutes.
- Whisk the warm milk mixture into the egg mixture in a steady stream. Add the dry ingredients and whisk just until you have a thick, smooth batter; do not overmix.
- Pour the sunflower oil into a large pot to a depth of about 5 cm and heat to 175°C (350°F). Let the batter rest while the oil heats, which helps the doughnuts puff.
- Using two teaspoons, drop heaped spoonfuls of batter into the hot oil, frying in batches so the temperature stays steady. Fry for 3 to 4 minutes, turning once or twice, until puffed and deep golden all over.
- Lift the doughnuts out with tongs and let them drain briefly, then roll them in the cinnamon sugar while still warm so it sticks well. Serve straight away, or within an hour for the best texture.

Tips
- Keep the oil close to 175°C (350°F): if it is cooler the doughnuts will absorb oil, and if it is hotter they will brown before the centres cook through.
- For the neatest shape, use two teaspoons to nudge the batter off the spoon and into the oil, then turn the doughnuts early so they puff evenly.
- If serving to young children, pregnant people, older adults, or anyone immunocompromised, use eggs that are produced to be eaten lightly cooked and make sure the doughnuts are cooked through.
Substitutions
- Replace Vanilla extract with 1 tsp vanilla bean paste for a more pronounced vanilla flavour.
- Replace Sunflower oil with vegetable oil for frying.
Storage
- Refrigerate up to 1 days
- Best eaten warm on the day they are made. If you must store them, keep in an airtight container for up to 1 day; reheat in a 180°C (355°F) oven for 5 to 7 minutes, then roll again in any remaining cinnamon sugar.
