Christmas Baklava Tray with Honey and Orange Syrup
Why this recipe works
- Crisp layered pastry: Brushing each filo sheet with butter helps the pastry bake into distinct, flaky layers.
- Fragrant nut filling: Walnuts, pistachios, cinnamon and cloves give the filling warmth, crunch and festive depth.
- Bright syrup balance: Orange and lemon cut through the honeyed sweetness, keeping the syrup aromatic rather than heavy.
- Good for preparing ahead: Baklava slices cleanly once fully cooled and keeps well, making it practical for entertaining.

Timing notes
- Cool before slicing: Let the baklava cool completely before lifting pieces from the tray; the syrup sets as it rests, giving cleaner diamonds.
- Best serving texture: Serve at cool room temperature for the best contrast between crisp pastry and syrup-soaked layers.
- Good the next day: The flavour becomes more settled after resting, while the top layers can still stay pleasantly crisp if stored airtight.
Texture tips
- Pour syrup carefully: Aim the warm syrup into the cut lines so it soaks through evenly instead of pooling on the surface.
- Keep the filo covered: Filo dries quickly once exposed, so keep unused sheets covered while assembling to prevent cracking and uneven layers.
- Cut before baking: Scoring all the way to the base before baking helps the pastry separate neatly and lets butter and syrup reach the layers.
Ingredient notes
- Use fresh-tasting nuts: Walnuts and pistachios are central to the filling, so avoid any that taste bitter or stale.
- Fresh citrus matters: Fresh orange and lemon provide both zest and juice, giving the syrup a cleaner, brighter flavour than bottled juice.
- Honey choice: A mild, pourable honey works well here, letting the citrus and spice come through without overpowering the pastry.
Make-ahead tips
- Make ahead for gatherings: Bake and syrup the baklava in advance, then keep it airtight until ready to serve.
- Freezing option: Freeze fully cooled pieces in a sealed container, then thaw overnight in the fridge and bring to room temperature before serving.
- For maximum crispness: If crisp top layers are the priority, serve within the first few days and store at cool room temperature rather than chilling immediately.

Ingredients
Instructions
- Heat the oven to 170°C (340°F). Melt the unsalted butter in a saucepan over low heat, then take off the heat and keep warm.
- Put the walnuts and pistachios in a mixing bowl and crush them with your hands into small, uneven pieces. Stir in the ground cinnamon and ground cloves until evenly mixed.
- Brush a baking dish generously with some of the melted butter. Lay in a sheet of phyllo dough and brush lightly with butter; repeat to build a base of about 10 sheets, keeping the remaining phyllo covered with a clean tea towel as you work.
- Scatter over a thin, even layer of the nut mixture. Add 5 more sheets of phyllo, buttering each one, then repeat the nut layer; continue until the nuts are used up, finishing with about 10 buttered sheets on top.
- Using a sharp knife, cut the baklava into diamond shapes, slicing all the way through to the base. Pour any remaining butter evenly over the top, letting it run into the cuts.
- Bake for 60 to 70 minutes until deeply golden and crisp, rotating the dish halfway through for even colouring. If the top is browning too quickly, lower the oven to 160°C (320°F) for the final 15 minutes.
- While the baklava bakes, make the syrup: put the caster sugar, honey and 200 ml water in a saucepan. Finely grate in the orange and lemon zest, then squeeze in the juice from both and bring to a gentle simmer for 10 minutes until slightly thickened.
- As soon as the baklava comes out of the oven, slowly pour the warm syrup over it, aiming for the cuts so it soaks in evenly. Leave at room temperature for at least 30 minutes, then cool completely for the cleanest slices.
Recipe notes
Tips
- Keep the phyllo dough sheets covered with a clean tea towel while you assemble, so they do not dry out and crack.
- For neat diamonds, re-cut along the original lines once the baklava has cooled completely.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised honey or avoid honey.
Substitutions
- Replace pistachios with the same amount of walnuts for an all-walnut filling.
- Replace orange with lemon for a sharper, more citrus-forward syrup.
- Replace caster sugar with granulated sugar; simmer the syrup 1 to 2 minutes longer to ensure it dissolves fully.
Storage
- Refrigerate up to 7 days
- Store in an airtight container. Baklava keeps best at cool room temperature for 3 days for maximum crispness; for longer storage refrigerate, then bring to room temperature before serving. Freeze in a sealed container for up to 2 months and thaw overnight in the fridge.
