Avgolemono Soup (Greek Chicken, Rice, Egg and Lemon)

In Greek cooking, avgolemono refers to the lemon-and-egg mixture that gives this chicken soup its unmistakable character: bright, savoury and gently creamy without using cream. Here, tender chicken, short-grain rice, onion and celery simmer in stock before the tempered egg and lemon liaison is stirred in off the boil, creating a smooth, lightly thickened broth. The result is comforting but fresh, with lemon cutting through the richness of the chicken and rice. Serve it hot with parsley, or use dill for a more traditional herbal note.

Why this recipe works

  • Silky without cream: Whisked egg and lemon thicken the broth gently, creating a smooth, velvety texture without dairy.
  • Bright, clean flavour: Fresh lemon cuts through the savoury chicken broth and keeps the soup light rather than rich.
  • Simple but satisfying: Chicken, rice and stock make the soup nourishing and familiar, while the egg-lemon finish gives it a distinctive Greek character.

Authenticity notes

  • Egg-lemon liaison: The defining step in avgolemono is tempering the egg and lemon mixture with hot broth before stirring it back into the soup.
  • Rice or orzo: Short-grain rice gives a fuller texture, while orzo is also commonly used for a lighter, more delicate finish.
  • Herb finish: Parsley works well, but fresh dill is a classic alternative that reinforces the soup’s Greek character.

Common mistakes

  • Do not boil after adding the eggs: Once the egg-lemon mixture is in the pot, keep the heat very low; boiling can make the soup separate or turn grainy.
  • Temper gradually: Add the hot broth to the eggs slowly while whisking so the mixture warms evenly before it goes back into the soup.

Ingredient notes

  • Use bone-in chicken for depth: Bone-in thighs add more savoury flavour to the broth and stay tender after simmering.
  • Adjust the lemon at the end: Add extra lemon juice only after the soup has thickened so the final acidity can be balanced to taste.

Make-ahead tips

  • Prepare the broth ahead: The chicken and broth can be cooked in advance, then reheated gently before adding the rice and egg-lemon mixture.
  • Reheat gently: Warm leftovers over low heat, stirring often, and avoid boiling to keep the texture smooth.
  • Best served fresh: Avgolemono is at its silkiest soon after the liaison is added, although leftovers can still be refrigerated and reheated carefully.

  1. Finely chop the onion and slice the celery. Put the chicken thighs in a stockpot with the chicken stock, onion, celery, fine sea salt and black peppercorns. Bring to a gentle simmer over medium heat.
  2. Simmer gently for 20 minutes, skimming any foam, until the chicken is cooked through and tender. Lift the chicken out to a bowl and keep the broth at a low simmer. When cool enough to handle, pull the meat from the bones and discard the skin and bones.
  3. Stir the short-grain rice into the simmering broth and cook for 12 to 15 minutes, stirring occasionally, until the rice is tender. Return the shredded chicken to the pot and bring back to a gentle simmer. Taste and adjust the salt if needed.
  4. In a bowl, whisk the eggs until smooth, then whisk in the juice of 1 lemon. Ladle in about 250 ml of the hot broth a little at a time, whisking constantly to temper the egg mixture. Take the pot off the heat and slowly whisk the tempered egg and lemon mixture back into the soup.
  5. Set the pot over the lowest heat and warm for 2 to 3 minutes, stirring, until the soup looks slightly thickened and silky; do not let it boil. Add more lemon juice from the remaining lemon to taste. Chop the parsley and serve the soup hot with parsley scattered over the top.

Recipe notes

Tips

  • Keep the heat very low after adding the egg and lemon liaison; boiling can cause the eggs to curdle.
  • For a smoother texture, whisk the eggs thoroughly before adding the lemon juice, then temper slowly with hot broth.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are pasteurised where available.

Substitutions

  • Replace Chicken thighs with Chicken breast for a lighter soup; simmer until just cooked, then shred.
  • Replace Short-grain rice with Orzo for a more delicate texture; cook until tender in the broth before adding the liaison.
  • Replace Fresh parsley with Fresh dill for a more traditional herb note.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container. Reheat gently over low heat until piping hot, stirring often, and do not boil to keep the soup smooth.
