Tandoori Chicken Bowl (Spiced Grilled Chicken with Rice and Cucumber)
Why this recipe works
- Deeply seasoned chicken: Yoghurt, garlic, ginger and tandoori masala season the chicken while helping the spices cling to the surface.
- Good bowl contrast: Charred grilled chicken, fluffy basmati rice and cool cucumber give the bowl clear texture and temperature contrast.
- Fresh finish: Lime and coriander cut through the richness of the ghee and yoghurt-marinated chicken.

Timing notes
- Marinating matters: The chicken needs at least 45 minutes in the marinade, but a longer chill gives the spices more time to season the meat.
- Rest before slicing: Let the grilled chicken rest briefly before cutting so the juices settle and the slices stay moist.
- Best served warm: Assemble the bowls while the rice is still fluffy and the chicken is warm, adding cucumber, lime and coriander at the end.
Adjust the heat
- For less heat: Use a milder tandoori masala and serve with extra yoghurt or cucumber to soften the spice.
- For more heat: Choose a hotter tandoori masala or add a pinch of chilli powder to the marinade.
- Keep it balanced: Finish generously with lime; the acidity sharpens the flavours and keeps the spice from feeling heavy.
Make-ahead tips
- Marinate in advance: The chicken can be marinated earlier in the day or overnight, ready to grill when needed.
- Store components separately: Keep the chicken, rice and cucumber in separate containers so the cucumber stays crisp.
- Reheat gently: Warm the rice and chicken until piping hot, then add the cucumber, lime and coriander just before serving.
Common mistakes
- Avoid crowding the grill: Leave enough space around the chicken so it chars rather than steams.
- Do not overcook leaner swaps: If using chicken breast instead of thighs, reduce the grilling time and cook only until the thickest part is cooked through.
- Drain the rice well: After boiling, drain the basmati thoroughly before adding ghee so the grains stay separate.

Ingredients
Instructions
- In a mixing bowl, stir together the yogurt, tandoori masala, garlic, ginger and 1 tsp of the fine sea salt. Add the chicken thighs and turn to coat well. Cover and marinate in the fridge for at least 45 minutes.
- Rinse the basmati rice until the water runs mostly clear, then drain. Bring a large pot of water to the boil, salt it with the remaining 0.5 tsp fine sea salt, and cook the rice for 10 to 12 minutes until tender but still separate. Drain well, return to the pot, and stir through the ghee; cover and leave to steam for 5 minutes.
- Heat the grill to medium-high. Lift the chicken from the marinade, letting excess drip back into the bowl, then grill for 5 to 7 minutes per side until lightly charred and cooked through. Rest for 3 minutes, then slice.
- Halve the cucumber lengthways and slice into half-moons. Cut the lime into wedges and roughly chop the fresh coriander. Fluff the rice, then divide between two bowls and top with the chicken and cucumber.
- Finish with a generous squeeze of lime and scatter over the coriander. Serve straight away while the chicken is warm and the rice is fluffy.
Recipe notes
Tips
- For deeper flavour and colour, marinate the chicken for up to 12 hours in the fridge.
- If you are cooking for anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt and make sure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace Chicken thighs with Chicken breast for a leaner bowl; reduce grilling time and cook just until the thickest part is cooked through.
- Replace Ghee with Butter for a similar richness in the rice.
Storage
- Refrigerate up to 2 days
- Store chicken, rice and cucumber separately in airtight containers. Reheat chicken and rice in the microwave until piping hot, then add the cucumber, lime and fresh coriander just before serving.
