Teriyaki Tofu Bowl with Sushi Rice
Why this recipe works
- Contrasting textures: Crisp-edged tofu, tender vegetables and lightly seasoned sushi rice make the bowl feel balanced rather than soft or heavy.
- Glossy teriyaki depth: Soy sauce, mirin, sake, brown sugar, garlic and ginger create a savoury-sweet glaze that coats the tofu without needing a long simmer.
- Efficient workflow: The rice rests while the tofu and vegetables cook, keeping the total cooking time manageable for a weeknight meal.

Timing notes
- Rest the rice covered: Leaving the rice covered after cooking helps the grains finish steaming and gives a better texture before the vinegar seasoning is folded through.
- Use the rice time well: While the rice cooks and rests, dry and cut the tofu, prepare the vegetables, and mix the sauce ingredients so the pan work moves quickly.
- Serve soon after saucing: The tofu is best once it has just been coated in the teriyaki glaze, while the outside is still hot and the rice remains warm.
Common mistakes
- Frying the tofu too gently: If the pan is not hot enough, the tofu is more likely to steam than brown. Keep the heat lively and turn the cubes as they colour.
- Over-reducing the sauce: The teriyaki should look glossy and coat the tofu lightly; if it becomes too sticky, it has reduced too far.
- Softening the vegetables too much: Broccoli and carrot only need a short sauté so they stay bright, fresh-tasting and slightly crisp.
Ingredient swaps
- For an alcohol-free sauce: Replace the sake with water and use the rice vinegar and brown sugar alternative in place of mirin for a similar sweet-tangy balance.
- Swap the vegetables: Broccoli can be replaced with extra carrot or other quick-cooking vegetables, provided they are cut small enough to sauté quickly.
Make-ahead tips
- Store the bowl components apart: Keep the rice, tofu and vegetables in separate containers where possible, so the tofu and vegetables do not soften too much in storage.
- Reheat with care: Warm the rice with a splash of water until piping hot, and reheat the tofu and vegetables in a frying pan to help preserve their texture.

Instructions
- Rinse the sushi rice in cold water until the water runs mostly clear, then drain well. Tip into a saucepan with 450 ml water and bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Stir together the rice vinegar and brown sugar until the sugar dissolves. Fold into the hot rice, then cover to keep warm while you cook the rest.
- Pat the tofu dry and cut into bite-size cubes. Heat 1 tbsp toasted sesame oil in a frying pan over medium-high heat, then fry the tofu for 8 to 10 minutes, turning, until golden on most sides. Transfer to a plate.
- Cut the broccoli into small florets and slice the carrot into thin matchsticks. Add the remaining 1 tbsp toasted sesame oil to the pan, then sauté the broccoli and carrot for 3 to 4 minutes until bright and just tender. Add a splash of water if the pan looks dry.
- Finely grate the ginger and crush the garlic, then add both to the vegetables and cook for 30 seconds until fragrant. Pour in the light soy sauce, mirin and sake, and simmer for 2 to 3 minutes until glossy and slightly reduced. Return the tofu to the pan and toss for 1 minute to coat.
- Divide the rice between two bowls and spoon over the teriyaki tofu and vegetables. Thinly slice the spring onion and scatter over with the roasted sesame seeds. Serve straight away while the tofu is hot and the rice is warm.
Recipe notes
Tips
- For the best texture, take a minute to pat the tofu really dry before frying so it browns rather than steams.
- Keep the teriyaki at a gentle simmer so it turns glossy without reducing too far; it should coat the tofu, not turn sticky.
- If serving to children or anyone avoiding alcohol, simmer the sauce for a full 3 minutes before adding the tofu to help cook off the alcohol.
Substitutions
- Replace mirin with an extra 1 tbsp rice vinegar plus an extra 1 tsp brown sugar for a similar sweet-tang balance.
- Replace sake with water for a non-alcoholic version; keep the simmer gentle so the sauce still turns glossy.
- Replace broccoli with extra carrot for a sweeter, softer vegetable mix.
Storage
- Refrigerate up to 3 days
- Cool and refrigerate the tofu, vegetables and rice in separate containers if possible. Reheat the rice with a splash of water in the microwave until piping hot, and warm the tofu and vegetables in a frying pan over medium heat until hot throughout.
