Caldo de Res (Mexican Beef Soup)
Why this recipe works
- Deep broth flavour: Bone-in beef shank and marrow bones give the broth body, savoury depth and a rounded beef flavour.
- Gentle simmering: Keeping the broth at a steady simmer helps the beef turn tender while keeping the soup clearer and cleaner-tasting.
- Fresh finish: Lime and coriander lift the richness of the broth and bring brightness to the tender vegetables.

Timing notes
- Mostly hands-off cooking: The active preparation is brief, but the beef needs a long simmer to become tender and flavour the broth properly.
- Add vegetables in stages: Firm vegetables go in before the cabbage and courgette so everything finishes tender rather than overcooked.
Ingredient notes
- Use bone-in beef: Beef shank and marrow bones are important for a broth with body, richness and a rounded savoury flavour.
- Cut vegetables generously: Large chunks suit the rustic style of the soup and help the vegetables hold their shape during simmering.
Common mistakes
- Avoid a rolling boil: Boiling too hard can make the broth cloudy and toughen the beef; a gentle simmer gives a cleaner result.
- Watch the courgette: Add courgette near the end so it cooks through without collapsing into the broth.
Make-ahead tips
- Good for making ahead: The broth develops well after chilling, making this soup a practical option to cook the day before serving.
- Reheat gently: Warm the soup on the hob until piping hot throughout, adding a little water if the broth has reduced.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating.
Equipment you'll need
Ingredients
Instructions
- Put the beef shank and marrow bones in a stockpot and cover with about 2.5 l water. Bring to the boil, then reduce to a gentle simmer and skim off any foam that rises to the surface. Simmer for 10 minutes to clarify the broth.
- Halve the onion and lightly crush the garlic cloves. Add the onion, garlic and 1 tsp of the fine sea salt to the pot, keeping the broth at a steady, gentle simmer. Cook for 1 hour 30 minutes, or until the beef is very tender and starting to pull from the bone.
- Peel the carrots and potatoes, then cut them into large, spoon-friendly chunks. Cut the corn into thirds. Add the carrots, potatoes and corn to the broth and simmer until the vegetables are nearly tender.
- Cut the cabbage into large wedges and cut the courgette into thick chunks. Add the cabbage and courgette, then simmer until the cabbage is tender and the courgette is just cooked but not collapsing. Taste and season with the remaining 1 tsp fine sea salt, if needed.
- Cut the limes into wedges and roughly chop the fresh coriander. Ladle the soup into bowls, making sure each serving gets beef, corn and vegetables. Serve with lime to squeeze over and coriander scattered on top.
Recipe notes
Tips
- Keep the broth at a gentle simmer rather than a rolling boil so the soup stays clear and the beef turns meltingly tender.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the soup is reheated until piping hot throughout.
Substitutions
- Replace the courgette with extra green cabbage for a more traditional, cabbage-forward bowl.
- Replace the lime with extra fresh coriander for a softer, less tangy finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently on the hob until piping hot; add a splash of water if the broth has reduced. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
